Banana Crumb Muffins
As usual, a recipe that has four plus stars turns out great.
If you had a problem with the muffins burning: you can put a thin cookie sheet under the muffin pan to shield and help distribute the heat better. If you made the muffins any bigger than the recipe calls for, either make them smaller or lower the temperature to 350 and bake for approximately 28 minutes.
If the muffins were bitter: you used too much baking soda/powder, or, your taste buds are too sensitive to them.
The crumbs can be tricky: I always add a little more flower and sugar to get the right consistency.
You may want to mix the flower and cinnamon in one bowl and the sugar and butter in another, then combine the two.
Not enough banana flavor: this is a common complaint with any banana bake recipe. I usually add vanilla to my banana recipes to compliment and bring out the flavor of the banana. For this recipe a half teaspoon should work. If you do not like vanilla, use less.
Too salty: again, baking soda/powder can have this affect when adding too much, or just too much salt. This is why some people get all the ingredients in separate bowls first before beginning.
My first time (just a half hour ago) making this recipe and it turned out great but a little too moist (hard to believe). Next time I'll lower the temp to 325 and bake for 30+ minutes.
