This soup was really delicious. The entire recipe makes a lot of soup - I cut it in half and it made 6 servings. The other changes I made were: 1) twice the garlic, 2) a little less carrot (2 for a half recipe), 3) 1/4 c. wine for a half recipe, 4) I substitued dry for fresh herbs (make sure to adjust measurements - 1 tsp. dried oregano for 1 Tbsp. fresh, 1/2 Tbsp. dried basil for 1 Tbsp. fresh), 5) I left out the spinach, because I didn't have any, and the green beans, because I don't like them. I came out with a hearty, flavorful, and truly delicious soup that adds a lot to any meal! I highly recommend this recipe.
