Butternut Squash Soup

Followed what another reviewers suggested and roasted the squash first. It was absolutley fantastic. I did add a little salt to finish it off. Very hearty for a squash soup.

Simple White Cake

Amazing! Followed other readers' reviews and added more milk (3/4 cup milk...I used 1/2 vanilla milk & 1/2 plain milk). And I replaced regular flour with unbleached cake flour (still sifted it). Creamed butter & eggs very well. These were moist & yummy. Why better then boxed and just as easy.

Uncle Bill's Chicken Strips

Pretty standard recipe (except for the dill). I usually don't make my chicken fingers with buttermilk, but I had some to use up so I searched and got this recipe. The other review is correct...don't use butter...use a cooking spray and place the rack higher in the oven. I also added some balsmic vinger to the egg/buttermilk mixture to bring up the flavor and used italian bread seasoning instead of dill to match the flavors. Any homemade recipe is way better then buying those frozen patty things! And you can up the health factor by using whole wheat bread crumbs & lowfat buttermilk.

Mint Chocolate Cake

I followed some of the other users changes. It taste good, but I would not say it is easy since you have to keep freezing the cakes between layers and getting the top layer on was a bit of a challenge. But if you like Andes candies you will love this dessert

I made this for a dinner party and it was a huge hit. I did not add the sugar...I think it would have been too sweet. Very easy and very worthwhile.
