Tomato-Mint Quinoa Salad

wonderful. doesn't even need oranges or anything else to make it sweet. i was starving so i didn't let it sit for a while. it was still great!

Melissa's Turkey Meatloaf

This is a nice base recipe. I did tweak it doing the following: I used all dry spices instead of fresh spices, used 1 cup of bread crumbs, omitted the milk and mixed in ketchup instead of putting the ketchup on top. I also made these into small serving sizes and froze uncooked. When I got around to cooking one of them, the meatloaf was very tender and tasty. I'm definitely happy with the results and will be making it again!!

Chutney Chicken Salad

I made this without the lime zest. Perhaps this is why it was good but not great. It was just too sweet. I was hoping it would have some zing to it but it didn't. I'll try it again but next time, with some lime zest.

Mediterranean Quinoa

Good recipe. I took people's advice and used only 2 cups of water. It worked out well. I also added cherry tomatoes at the end instead of regular tomatoes. I also added a chili pepper for spice.

Southwestern Black Bean Stew

Solid recipe however I tweeked it a bit. It ended up being a simple, hearty chili when I was done (see my photo). I used dried black beans that were soaked overnight, ground beef, a special chipotle taco sauce, a can of diced tomatoes and spices (chili, dried chilis and cayenne pepper). I let the beef and diced tomato mixture simmer for a bit to get rid of the excess liquid. Then, I added the beans. Topped with cheddar cheese and sour cream. Yummy!

Spicy Slow Cooker Black Bean Soup

First, unless you have a certain type of food processor, DO NOT PUT SOUP IN THE FOOD PROCESSOR. It made a *huge* mess trying to chop it all up in my food processor. Second, next time I'm going to use more beans as the soup was still kinda thin after processing. Third, this soup is really a cross between chili and soup. I wish it had been thicker like chili. Will I make it again? Perhaps but with my additions.

Turkey Meatballs in Garlic Sauce

Didn't like it but made a few substitutions. Basil for parsley, egg for milk, pepper flakes for hot pepper sauce, bread crumbs for butter-flavored crackers, pasta sauce for v8 juice and garlic powder for garlic cloves. Perhaps I tried and got a little *too* creative.

Simple Turkey Chili

Good but not great. It's just too watery and not missing something. Would be great with some bell peppers and more veggies. Next time I'll stick to my fav turkey chili recipe.
