A HIT! This was my 1st try at this recipe but it was easy and great as is, although, I did add a few scallions in, otherwise I found no need to add/delete anything to start. I was nervous adding in all that oregano fearing it would be overpowering but it's DELICIOUS! Next time, I would keep it the same but add in red onions and chop my veggies in bigger pieces (I diced them the 1st time), maybe I'll add in fresh minced garlic too. Good good stuff - better the next day. Hope you're hungry - it makes a lot.
