Red Pepper Vinaigrette

YU-HUH-UH-MEEE!! Great balance of flavors and sweetness. I strained the dressing to get the last of the red bell pepper skin bits out but otherwise, followed the recipe. Would probably very tasty with roasted red peppers too. Thanks for the recipe - we will be enjoying again.

Absolutely Fabulous Greek/House Dressing

Have to admit that at first we weren't sure we liked this but it grows on ya! I think after it wilted the greens a bit and saturated everything the flavor just wows you. Very good. I made it as is and would keep making it that way. Most dressings are sweet (which I like too) but this is a wonderful option minus the sweetness. Thanks!

Orange Citrus Vinaigrette

YUM! Great recipe. I do have to confess I didn't use cilantro because I'm not a fan (I know, I'm Hispanic and don't like cilantro - go figure) but I KNOW this dressing would be superb with it for those who are fans. Aside from the missing cilantro, I kept to the rest of the vinaigrette by using a fresh squeezed orange and two cloves of garlic. Note: don't be crabby to find dressing at the bottom of your salad; even with little oil the flavor manages to cling to every bite! A lot of flavor. This is a refreshing change from the usual dressings. Thanks!

Mama's Balsamic Vinaigrette

Thank you SOSARA77! This was perfect. We had it on our salad of mixed greens and it tasted so light and delicious. Only thing I did differently was add an extra clove of garlic as my hubby and I love it so much. So much better than store bought and so much healthier.

Ten Clove Garlic Marinade

Mmm mmm good! Definitely a must-have on the list of marinades. I omitted the addt'l salt since the soy sauce is salty enough, but even that, I used low-sodium soy sauce. Very flavorful! I think next I'll use shallots instead of onion just for kicks. Thanks for a great recipe.

Burrito Pie

Delicious and easy! I used leftover taco meat from the freezer we had cooked, seasoned and then food-savered so it made this very quick - after it was heated thru I followed the rest of the ingredients/instructions. Great weeknight meal.

Garlic Cheddar Chicken

Thank you for a great recipe! My husband raved and raved -- he's so hard to please when it comes to chicken & this one we both loved! Changes: added an extra clove of garlic, omitted salt from breading mixture and decreased cheddar cheese by about 1/4 cup. Figured there was enough salt in the cheese w/o having to add in extra. Personal pref. Chicken was juicy & tender w/lots of flavor. Will definitely be making again. I have made this 3x in less than 2 weeks that's how good this is!

Gerry's Chicken Enchiladas

Superb! Worth the time & effort & it's definitely time-consuming. Took much longer than stated but oh well. Because it was taking so long I decided to serve this for dinner the NEXT day - I finished everything including baking it & then reheated it. Turned out great. I followed the recipe as is except didn't use cream, instead heated up the tortillas until pliable in a non-stick pan (no oil nec.) & my hubby, the prince, said to NOT CHANGE A THING (he said they were the best he's ever had). I might try a different marinade (I used a chipotle one) cuz mine had a strong flavor but it was still awesome. This made 9 or 10 'chiladas. Might try using the crockpot next time too. Thanks - a keeper for sure!

Garlic Chicken Fried Chicken

Pretty good - I added in some cayenne but still lacked some flavor but it's a good base to experiment with. I wasn't in the mood to dig out the electric skillet so I pan fried skinless, boneless breasts then finished cooking in the oven. Not as good as deep frying but good enough. It was a little dry but that's my fault. My husband liked this; he commented without any solicitation from me! And that says a lot! :)

Banana Crumb Muffins

Uh, yeah! So Good! My husband requested banana bread and I've been wanting to make this particular one for awhile so perfect opportunity. Hubby was disappointed when he realized I wasn't using his Mom's recipe but as soon as he tried these he said THESE ARE THE BEST BANANA MUFFINS EVER! He said they were so light and yummy and wants me to make these always and to not change a thing. I followed the recipe as is, just doubled it, which makes 24 good size muffins, and so glad I did because we will snarf these down - no prob! Thanks for making us happy.

Old-Fashioned Rice Pudding I

My husband made this tonite (followed recipe as written) and neither of us found it all that impressive. I thought it was okay tasting but there seemed to be something missing (cinnamon my guess) and my hubby thought it was too "eggy" tasting. It was worth a try but I think we'll try a different recipe.

Stuffed Shells III

This was good. I followed the recipe as written but in place of mushrooms, I added chicken sausage. Worked out very well and my husband loved it. I halved the recipe and it still made plenty of leftovers, which will be perfect for lunch. Great recipe -- will use this again.

Garlic Chicken

Yummy! Very simple and tasty. I used more garlic than it called for because we LOVE garlic (it was still subtle) and made more bread crumb mixture because it wasn't enough as is, probably because I pounded out the chicken so it would cook faster. I used both grated and shredded parmesan cheese in the mixture; just for more texture and crunch. I liked someone's idea of using panko crumbs so I think I'll try that next time and try perfecting crisping up the chicken on both sides. Thanks for a good recipe. Good stuff!

Spicy Chicken Breasts

I'm obviously one of the few who did not like this. We couldn't eat it at all so instead it went in the trash! I followed the recipe almost exactly; I used a little less kosher salt than it called for and a little less cayenne. It just seemed too much when putting this together and I was right. My husband and I thought it was too salty and too hot, and we both usually say: "the hotter the better" but unfortunately, not in this case. I will say the chicken was moist and tender but I will not be using this rub again. Thanks anyway -- I had such high hopes. :(

Antipasto Pasta Salad

A HIT! This was my 1st try at this recipe but it was easy and great as is, although, I did add a few scallions in, otherwise I found no need to add/delete anything to start. I was nervous adding in all that oregano fearing it would be overpowering but it's DELICIOUS! Next time, I would keep it the same but add in red onions and chop my veggies in bigger pieces (I diced them the 1st time), maybe I'll add in fresh minced garlic too. Good good stuff - better the next day. Hope you're hungry - it makes a lot.
