I'm happy to report that I have four happy, healthy teenage chickens now. I originally got 3 on Valentine's Day but we lost one to a mean neighborhood cat :(  But it's ok because we introduced two new little guys and now all four are attached! All four try and sleep in the same nesting box… MORE

About this Cook
I am a serious cooking enthusiast living in the RAINY NW. Getting cooped up inside most weekends makes it easy for me to spend time making the kitchen explode! :) I've definitely taken after my Grandma when it comes to cooking and making it look like a bomb hit the kitchen- but more often then not the mess is worthwhile when it comes to spending a great evening with my other half or a group of friends enjoying great wine and drinks and a delicious dinner. Cooking in a healthy and local/organic way has become a higher priority over the last few years and having a large veggie garden and now my own backyard urban chickens this coming summer should now be filled with great food and gatherings.
My favorite things to cook
I really enjoy making cooking a challenge and switching up what I cook and the level of the recipe. Cooking or baking is always a great way to spend a rainy afternoon (since we have so many of them here in PDX)and it's always wonderful how the aroma will fill the house. Baking breads and BBQ in the summer are probably two of my favorite things to make- along with my current obsession with Italian food...more specifically authentic pizza.
My favorite family cooking traditions
I always love when our family gets together for Christmas because we put together a great schmorgisborg full of crab, lox, deviled eggs, etc...and of course good wine and drinks! I must say that the rum cake made for dessert is still my favorite part.
My cooking triumphs
Discovering the secret to perfect pizza crust! It took me many many tries and many different variations but I finally got it perfected. Italian food is absolutely amazing and making a more authentic Italian pizza was a challenge until I figured out the proper way to make the pizza dough. My apple tarte tatin with homemade puff pastry was another tasty triumph. I've also been making my own dog food and love being able to make sure my dog is getting everything she needs nutritionally. No more bad commercial dog food here.
My cooking tragedies
Having a passion for food means there have also been a few kitchen disasters...there is a chicken pot pie that no one is allowed to talk about in my house and can't forget the pumpkin pie I was craving for weeks and then forgot to add sugar too. Oops!

Restaurant Style Beef and Broccoli
This was really delicious! I modified the recipe a little based on some reviews- added one extra clove of garlic, ginger powder, some red pepper flakes, and some salt and pepper. I also combined everything together instead of adding the ginger and garlic to the oil. I used about 2 teaspoons of potato starch as I'm allergic to corn. I also added 2/3 cup beef broth to extend the sauce. Will definitely make again!

Honey Ginger Shrimp
Followed some other reviewers suggestions and added approximately 1/2 can of coconut milk. I also added extra garlic and honey along with adding some fresh ginger (still added ground ginger). This was delicious! Served over rice with steamed broccoli and cauliflower.

Garbanzo Bean Chocolate Cake (Gluten Free!)
This was delicious! I would never have though it could taste so amazing without flour and butter but it did! I made them in little mini muffin pans to keep portion control down when eating them (baked at 350 for 15 min). Next time I'll plan to blend it a little longer in my food processor but that was user error.
