Soft Dinner Rolls

I made these with regular flour and no other changes and they came out fluffy and delicious. I never have luck with bread but this recipe is easy and foolproof.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This is a delicious salad! I increased everything except the dressing, to which I added a clove of garlic. I also added cherry tomatoes and green onion instead of red. Steamed the kale for about 20 seconds and it wasn't bitter at all. Super!

Chicken Stir-Fry

This was a good recipe but I did make a change. I cut the soya by half and replaced it with chicken broth and I'm glad I did. I love soya sauce but I think as written it would have been too much. I also cut the sesame oil to 1/2 tsp and replaced with olive oil due to personal taste and it was delicious. Other than that I made as written and it was very enjoyable over rice with spring rolls.

Grilled Chicken with Rosemary and Bacon

I've made this with and without rosemary and it is wonderful both ways. Grilled on bbq and bacon crisped up perfectly, just don't make chicken too thin. And one piece of bacon won't kill anyones healthy eating now c'mon :)

Pumpkin Black Bean Soup

Yummy! Made as directed except did not use ham, left one can of beans and some of the tomatoes whole and added corn, which was a nice addition. Will def make again.

Greek Chicken

This was delicious and easy. I made as is except I used all chicken broth since I had no white wine, left out the onion (didn't think it necessary here), used less olives and doubled the sause mixture. Baked for 40 mins (half covered half not) was perfect.

Quinoa with Veggies

This was my first time making quinoa and this recipe was delish. I followed the recipe exactly, except I cooked the quinoa in chicken broth. I used zucchini, red pepper, corn and red onion, plus a little more oregano. I mixed the left overs with some feta, chopped tomato and baby spinach and put it in a pita for lunch. Yummy.

Mama's Asian Chicken and Rice

This was easy and excellent. Followed the recipe exactly, except used chicken broth instead of water. Doubled the sauce but not the sugar, which was good because it was plenty sweet. Also added a large red pepper. The crushed red pepper gave it a little kick and love the chinese 5 spice.

Delicious! Left out the water and celery salt. Added chili paste instead of hot sauce. Next time I'll reduce the vinegar a bit but otherwise a fabulous dish my family enjoys.

Easy Sour Cream Cheesecake
