Hearty Turkey Soup with Parsley Dumplings

This soup is awesome! Pure comfort food. I made this using the Thanksgiving turkey carcass. I pressed a few (4 or 5) large cloves of garlic while making the broth. I omitted the rutabega, added 5 small potatoes,added some fresh basil I had on hand for another recipe, and added a bit of salt. The flour/milk mixture makes a nice creamy broth. I do not have a food processor, therefore I used another recipe I had for the dumplings. Will definately be making this recipe again and again! Thanks Christine...

Cookie Balls

These were pretty good. They taste more like candy or fudge than a cookie. They must be kept refrigerated due to the cream cheese. I made a triple batch for a Christmas cookie exchange I attended. The "three ingredients" caught my attention when I was looking for recipes. After I combined the cookies and cream cheese, I made the mistake of immediately rolling into balls and dipping into the chocolate. But because the "dough" was by then room temperature they were breaking apart in the melted chocolate. That's why it's imperative to work with cold/firm dough to make it work. Once I did that it was pretty straight forward. I used dark chocolate instead of white since I'm not a fan. I would probably make these again. Thanks Annette!

Cranberry Apple Pie I

My family loved this pie! It had the perfect blend of sweet/tart taste. Based on others reviews, I used only 4 apples & 1/2 pkg (6oz) of cranberries, and it was plenty! It filled one 9" store bought deep-dish pie crust, and had enough filling leftover to fill 6 tart shells. I added chopped walnuts to the streusel topping which tasted great. Before baking, I wrapped foil around the edge of the crust so it wouldn't burn during the baking which allowed the topping to get nice and brown & crisp. Excellent. I will be making another one for Christmas using the other half package of cranberries I have waiting for me in the freezer. Thanks Blythe!

Creole Cornbread Stuffing

This stuffing is awesome! I made it for Thanksgiving. My mother-n-law always made cornbread stuffing every Thanksgiving, and she passed away this year, I wanted to make this for my husband. It is a lot of work but worth it. I chopped all the vegetables, herbs, and garlic & put in a freezer bag the day before (took a full hour since I don't have a food processor) so it was a breeze the next day putting it all together. I was hesitant to use 7 eggs, but it turned out fantastic. I did not stuff the turkey, I just baked it in a greased casserole dish on 350 for about an hour. The flavor is incredible. I cut up the leftover stuffing into squares and wrapped individually in sandwich bags & then put all in a freezer bag. Thanks Kevin. This will become a regular at our house!

Tortilla Rollups II

I brought these in for a Halloween Potluck,and I received many compliments. I made them the night before due to time constraints as well as the fact the cream cheese mixture has to be room temperature to work with & i didn't want to "nuke" it cuz i thought it would change the consistency of the cream cheese. I justleft them uncut,rolled them in foil overnight and then right before serving the next day cut them into 1" pieces. They were pretty good/the tortilla was slightly soggy but still looked & tasted fresh. I made the following changes: I took others suggestion to add 1 tbs taco seasoning mix, took a piece of deli turkey & cut in half and placed on top of cream cheese mixture so the turkey slice covered the entire width of tortilla, then added finely chopped romaine lettuce to add extra texture and some color. I think the next time i would use 12 oz cream cheese because was spread pretty thin. I was only able to assemble 8 tortillas with the 8oz cream cheese mixture. Overall it was a good recipe and would make again, it's very versatile! Thanks for the recipe
