Vegan Bean Taco Filling

Pretty good! Tastes pretty much like I thought it would, I did not have enough salsa on hand so I added a little tomato sauce. I just wanted to try it so I whipped up a half batch for lunch and stuck it on a tortilla. would be great with shredded lettuce, tomatoes, black olives and avacado!

Cinnamon Oatmeal Cookies

These cookies are the bomb, try em. Half recipe fit perfectly in my kitchenaid mixer and made just enough to fit in the cookie jar (after my son and I ate a few...gotta test each batch!)

Ziti Lasagna

well I can't really say I followed the recipe, I really used it as a guideline I used ground turkey, no green onions or peppers, fat free cottage cheese instead of ricotta and onion and garlic del monte spaghetti sauce and it turned out GREAT. My picky 8yr old ate it and that's sayin somethin!

Eggless Tofu Spinach Quiche

I omitted the crust, added mushrooms and boiled fresh spinach with the onion as one previous reviewer had mentioned. I also used soft tofu because the recipe didn't specify. So this is more like a dip or topping for some nice crostini but the taste is pretty good. Perhaps if you follow the RECIPE it will turn out more like quiche but mine is a dip! tasty dip though!

World's Best Scones! From Scotland to the Savoy to the U.S.

well, they're good but I'm a little confused because the ones I made could easily be mistaken for muffins. They are soft and moist and slightly sweet. I used raisins and cinnamon. So I'm wondering if that's the way scones are supposed to be? the ones I've gotten at bakeries have always been a little drier is that because they are not fresh? hmm...

Pasta/Pizza Sauce

Nope not impressed. Sorry, I so wanted it to be good since it is very easy to make. It had a weird tinny taste I couldn't put my finger on may have been the wine I used, maybe good to drink but not good to put in pizza sauce I don't know for sure. I thought it just needed more sugar so I ended up putting a bit more than 3 teaspoons and that was my limit would have been too sweet with anymore. Tried to add more spices and still blah. Darn it.

Terrific Turkey Meat Loaf

This is my new meatloaf recipe! It is not only easy, inexpensive, lowfat and high protein but it actually tastes good too!! I don't eat beef and so I can't say how it compares to beef meatloaf but I can say I have had a couple of disasters with turkey meatloaf and this turned out fantastic. The first time I made it I didn't have any sage or dijon mustard and I subbed wheat bran for oat bran cuz that's what I had, so I skipped the sage and used some honey mustard dip I had in the fridge, It was a little on the dry side but flavor was good. The next time I made it I increased the egg whites to 2 hoping to make it moister, still didn't have any sage and used spicy brown mustard and wheat bran. Voila!! I must say though it doesn't make a huge loaf but it was perfect for my big eater husband, my 8 year old and myself so if you have a lot of people to feed you might want to double it. Also it only took 45 minutes in my oven and I think it may even have been done before that. It's a keeper!

Parmesan Chicken I

this was a pretty good comfort food and I had all the ingredients on hand which was great. I did use preseasoned italian chicken breasts which might have made the meal a bit more salty than I would prefer so watch that I don't know if it is salty with regular chicken breasts. Anyway, good and easy recipe. Thanks.

Raisin Oatmeal Cookies

THESE ARE PERFECT!! made two batches one with really small cookies and one with bigger (tablespoon size) and I think they're best small. YUM. It's a keeper.

Cheesy Vegetable Lasagna

yum. It didn't take that long to make mostly because I left out some of the vegetables due to my 8 year old sons request. I used only broccoli, carrot, and half a bag of frozen veg mix I had in the freezer with broc, carrot, and cauliflower in it. I sauteed the raw veggies with the garlic and steamed the frozen ones then just mixed them together before putting in the pan. This is great for my picky son, way to get veggies in him! Tasted pretty much like veggie pasta alfredo. MMM. I did cook the noodles before hand but usually I just add 1/4-1/2 cup water to each end.

Fast Chicken Soup Base

This is a GREAT recipe, mostly followed to the T but used chicken base instead of broth and way more water I think I ended up using 5 quarts of water and I put noodles in it. YUMMY. Thanks for sharing.

Aunt Teen's Creamy Chocolate Fudge

I gave this recipe 2 stars because it tastes pretty good although it is EXTREMELY sweet, however after boiling and stirring till softball stage (I used a thermometer) I poured the chocolate chips in and it turned into a stiff batter and did not "pour" into the pan at all but had to be dropped in and pressed flat. This is my first attempt at fudge and I followed the recipe exactly yet it is not soft and creamy at all. :( I noticed that many people claim to have gotten extremely soft fudge and I had to boil mine for a little longer than 5 minutes to acheive the right temp so maybe it doesn't need to be exactly soft-ball stage?? Any Hints would be welcome.

Easy Pasta Chicken

Okay, I didn't really follow the recipe because after reading some of the reviews I didn't think it would work out but I needed something quick and easy so I decided to try the recipe with a few changes...I used all the ingredients but only 3 chicken breasts. I grilled the breasts on my george foreman grill and I cooked the pasta alone in the soup mix also adding garlic, salt, pepper, basil, summer savory, and a lot of grated parmesan. I had to add a very small amount of water to the pasta before it was done, I then added the chicken(which I had cut into small peices) and a bit of milk to keep it creamy and I cooked the veggies in the microwave and ate them on the side with the chicken and pasta mix.

Italian-Style Spaghetti Squash

I really wanted to like this recipe because I absolutely LOVE spaghetti squash, however I do think it is missing something (NOT MEAT!) and after reading a few other reviews I realized it is missing GARLIC of course why didn't I think of that and I would also throw in some mushrooms next time. I will try it again because I'm sure I will find a way to tweak it to perfection for me. Thanks for the idea. Oh, and I just microwaved my squash whole for a little over twenty minutes turning it every 6-8 minutes.

Spiced Sweet Roasted Red Pepper Hummus

Well, I thought 1/2 tsp of cayenne was a lot and it was. This was a pretty good recipe and I absolutely LOVE spicy/hot food but I think I prefer my hummus to be a bit milder because after the first bite all you taste is the cayenne pepper.

Pineapple Upside-Down Cake II

okay, I don't know why some people think this is soggy or way too much butter?? I followed the recipe exactly and it turned out PERFECT. I did sub margarine for butter but other than that just did what it said and it is scrumptious. Great version of a classic fav. thanks Nina.
