Stuffed Peppers My Way

This was my first stuffed pepper recipe and I loved it! I substituted the feta cheese for tex mex and added in some diced celery. I will definitely try adding different combinations of vegetables next time.

One Pot Tuna Casserole

This dish came out great with a few changes! The quantity of pasta and peas was too much, so you can either cut down on the pasta or add more tuna (about 1 can more as others suggested). I also decreased the amount of peas used. Following other reviews, following are some additional ingredients I added: 1/2 teaspoon onion powder, 1/2 teaspoon garlic, 1/2 teaspoon paprika, 1 tablespoon Worcestershire sauce, and a little bit more milk. It would have turned out too bland without these additional spices. I then put the mixture into a casserole dish, sprinkled Italian breadcrumbs and a little cheddar cheese on top, and baked it at 375 degrees for 20 minutes. Next time I would like to add coriander leaves and some additional vegetables and see how it turns out!

Easy Peanut Butter Fudge

This didn't turn out well. There was too much sugar and it didn't harden in the fridge. It looked more like thick melted chocolate. I ended up baking a cake and spread this on top and in between as icing. It turned out alright.

Barbara's Golden Pound Cake

I liked this cake. It turned out just the way i like it - crisp on the outside. The only thing I did different was i cut down the quantities of each ingredient, because I didn't want such a big cake. I also didnt have lemon extract. The only thing that didn't turn out right was the icing. I dont see how 1 tablespoon of lemon juice and one and a half cup of icing sugar will give you a glaze. I had to add more lemon juice and heat it up to make it a dough ball. That made it difficult for me to put on the cake, and in the end I didnt like the icing at all, so I peeled it off and threw it away. But the cake was worth making. I suggest finding an alternative glaze recipe for the top, because you'll need an icing for sure.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

The recipe is really good but it's missing some things. First off, it was really dry and it should really have some curry to it. I realized that the colour wasn't catching on to all of the cauliflower... just the tops and bottoms. I used half of a big cauliflower which might have been more than a pound. I added tomatoes (which you really should put in) and one cup of water. The water made it lose a bit of flavour and it was still dry. So after reading the other reviews, I added 1/2 can coconut milk and that made a good curry base. Also, I didn't have cilantro, so I used parsley instead, which worked well. In total, I put in twice the amount of spices that the recipe asked for, for the half a cauliflower I used. This makes the curry rich and flavourful. You need to simmer the dish on low for about 20 minutes longer as well. In the end ...it turned out great!
