Homemade Shake and Bake Mixture

This was absolutely wonderful!! Much better than the commercial kind. Used a cut up fryer and chicken came out of the oven (400 degrees for 50 minutes) tender and juicy. There's enough mix for at least one more chicken! Thanks for submitting, Sara. Will definitely make again!

Hot Italian Giardiniera

Yummy! I did modify it a little. Used one large green and one large red pepper, 2 large serrano peppers thinly sliced instead of jalapenos, 2 celery, 3 carrots, 1 1/2 cups cauliflower, 3 large cloves garlic, 1 tsp Mexican oregano, 1 1/4 cups cider vinegar, 1/2 cup canola oil & 1/4 cup water. Omitted the olives because husband doesn't like them. Fabulous!

Maple-Drizzled Apple Muffins

Husband says this is a 5-star muffin! I used some really mealy red delicious apples that I was about to throw away but he said the muffins were great. Certainly were easy to make.

Cheddar Baked Chicken

Really good! I did decrease the butter both in the pan and to pour over the chicken. Also used garlic flavored bread crumbs because that's what I had. Yummy!!

Alyson's Broccoli Salad

WOW! This was wonderful after it sat overnight! Made a number of changes to make it healthier and based on what I had on hand. Used real bacon bits, about 1/3 cup, instead of bacon. Also used dried cranberries instead of raisins, two packets of Splenda instead of sugar and about 3/4 cup light mayonnaise and 1/2 cup sunflower seeds. Was good without sitting but was way over the top the next night!

Chocolate Zucchini Cake III

Really yummy!! Subbed 1 cup unsweetened applesauce for 1 cup of the oil and chocolate chips instead of walnuts because family doesn't like the nuts. Didn't frost it at all. Extremely moist and flavorful! Great way to use the abundance of zucchini in the garden!

Potato Potluck Dish

Not exactly a low-cal dish but this is absolutely wonderful!! I really had more sauce than I needed but maybe I didn't use enough potatoes as I just guessed at the amount. Flavor was wonderful and husband ate 3 servings! Will definitely make again.

Strawberry Yogurt Pie I

This pie is the easiest pie ever to make and it's absolutely delicious! I made it with sugar-free yogurt and light whipped topping to cut the calories even further. I'm anxious to try it with peaches, raspberries and blueberries! Thanks for the great recipe!

Cream Cheese Basil Summer Squash

This is the easiest squash recipe ever! And it's delicious! What more could you want? Only change I make in the recipe is to take the suggestion from another reviewer and add one can or Rotel tomatoes for spice. I have even made it and frozen it for later. (We have lots of squash in the garden.) Will continue to make often! Thanks for the great recipe!

Favorite Barbecue Chicken

Really a great barbeque sauce! I thought it might be too sweet but once the chicken was cooked with it on it was perfect! Only thing I did different was add about 1 tsp liquid smoke and marinade the chicken in the cooled sauce for about 2 hours before grilling. Will definitely make again.........and often!

Easy Grilled Chicken Teriyaki

Excellent! Used a cut up fryer and lime juice instead of lemon because that was what I had. Marinated it for about 5 hours then grill on a gas grill. Absolutely delicious! Will definitely make again.

Sesame Parmesan Zucchini

Excellent! I used 2 small zucchini, 2 small yellow squash and 1/4 large sweet onion cut into wedges. The cayenne was perhaps a little zippier than I would have preferred but husband loved it! Will definitely make again!

Party Chicken Wings

Excellent! I mixed up the marinade and put a bag of frozen wings in it two days in advance. By the time I baked them they were very flavorful. Baked them at 350 for 1 hr and 15 minutes, turning twice during that time. Will definitely make again.

Sweet and Spicy Stir Fry with Chicken and Broccoli

I made a number of changes based on what I had on hand but found that it was still excellent! Had zucchini from the garden that needed to be used so subbed that for broccoli. Added also red, yellow and orange peppers, julienne carrots and water chestnuts. Also used teriyaki sauce instead of hoisin. Did make more sauce because I had more veggies. Thickened with a little cornstarch just before serving and topped with a few peanuts. Great stir fry recipe!

Banana Crumb Muffins

Absolutely wonderful! Only change I made was to sub canola oil for the butter in the batter and added 1/2 tsp cinnamon and 1 tsp vanilla. Wonderful cake-like texture too. Great breakfast for our teenage granddaughters on school days.

Super Duper Slow Cooker Beef Stroganoff

This was wonderful! Followed the recipe exactly except omitted the red wine because I didn't have any. Used water instead. I found that the sauce was a little thick but maybe some of the moisture cooked away. Will watch and maybe add some additional water next time. Flavor was fabulous! My guests loved it!! Will certainly make again. Thanks!

Awesome Pasta Salad

This is a wonderful pasta salad! I made it for a graduation barbeque for my granddaughter. It was truly a hit! Tastes like antipasto in a salad! Used sliced string cheese instead of provolone (because that's what I had) and diced red pepper instead of pimento. Also used fat free Italian dressing. Yummy!!
