Green Chile Chicken Stew

WOW!! This was wonderful! I used 2 very large boneless chicken breasts instead of a whole chicken and subbed two very large jalapenos with seeds instead of the habaneros. (Call me a chicken!) It was just right for me; husband added a little more hot sauce. Love the fact that it's more of a chicken vegetable stew and doesn't contain beans as most recipes do. Will most definitely make it again!

Lemon Herb Barbeque Sauce for Chicken

Followed the recipe exactly and used it as a marinade for approx 1 1/2 hours then cooked on the grill. My granddaughter said it was the best chicken she had ever eaten! That's good enough for me! Will definitely make again!

Good Old Fashioned Pancakes

These pancakes are absolutely delicious! Followed the recipe except used canola oil instead of melted butter (cholesterol issue) and added about 1/4 cup more milk. Far better than our usual pancake mix!!

Sicilian Sausage Soup

Chicken Noodle Soup

This was really delicious! Followed the recipe except added a little garlic powder, poultry seasoning and a dash of cayenne pepper to add some zip! Really easy too. Will definitely make again!

Guacamole

This made a wonderful guacamole! I cut back on the cilantro a little because my husband doesn't like it and used a tiny bit of cayenne. Next time I will use more of the cayenne to spice it up a little but otherwise will not make any other changes. Fabulous!!

Microwave Caramel Popcorn

Absolutely wonderful! And super easy! What more could you ask for? Update: The first time I made it I used real butter. Just made it again using Smart Balance margarine. Not nearly as good! Will just have to use the good stuff!

Black Bean Salad

What a great salad! Used fat-free Italian dressing and frozen corn. My husband doesn't like cilantro or avocado so only put that in mine. He also likes it hotter than I do so added another jalapeno with seeds to his. Perfect for both of us with these additions. Will definitely make again.

Chili Seasoning Mix II

Really good! I did use 1/4 tsp cayenne pepper instead of red pepper flakes and used Mexican oregano instead of basil. Also used an equal amount of cumin to chili powder because we love the taste of cumin. With these substitution I used 1/4 cup of seasoning as I would one packet of seasoning mix. It's really good!! Just enough heat to suit us. Will no longer buy the packet stuff!

Red Potato Salad

Great! I had half a bag of red potatoes that needed to be used so made this. It was much better the second day but was good even the first day. Husband said it was much better than "store bought"! That's good enough for me! Followed the recipe except that I added a little more celery and dill pickles and doubled the vinegar for tang. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

To use my husband's words, "fantastic". Only change I made was to soak my raisins for a few minutes in hot water because they weren't the freshest and to add about 3/4 cup chopped pecans because I didn't have walnuts. Will absolutely make again. Thanks for the great recipe!

Crunchy Peanut Bark

I came in to review this recipe and realized I had omitted the rice cereal when I made it! I used dipping chocolate instead of white coating, and I simply poured it into an 8 x 8 pan. It was so easy and ABSOLUTELY WONDERFUL! Will have to try it again with the rice cereal but it's great without it too!

Slow Cooker Chicken Taco Soup

This is excellent though pretty mild. I added a little cayenne pepper and about 1 T. cumin. That made it good for me. Husband added Tapatio to heat it up even more. Very good though!

Party Chicken Wings

Excellent! I mixed up the marinade and put a bag of frozen wings in it two days in advance. By the time I baked them they were very flavorful. Baked them at 350 for 1 hr and 15 minutes, turning twice during that time. Will definitely make again.

Delicious Ham and Potato Soup

WOW!! This is by far the best potato soup I've ever eaten! I used red potatoes that I didn't peal and added about 1/2 cup shredded cheese when the soup was done. Really wonderful! Will most certainly make again! Update: Needed to make without the ham because Doc had dental work done. Made with russet potatoes and 8oz light Velveeta. Even Doc liked it!
