Baked Mushroom Rice

Reviewed: Nov. 8, 2004
Recipe can't be right. 2 c. uncooked rice with only 1 can soup and 1 c. broth is no where near enough liquid. I added 3 c. chicken broth and then heated it for 10 minutes in the microwave before putting it in the oven so it would be ready when the rest of the meal was ready. Flavor was OK and recipe was easy but if that's only 6 servings they're huge!

Homemade Shake and Bake Mixture

Reviewed: Nov. 8, 2004
This was absolutely wonderful!! Much better than the commercial kind. Used a cut up fryer and chicken came out of the oven (400 degrees for 50 minutes) tender and juicy. There's enough mix for at least one more chicken! Thanks for submitting, Sara. Will definitely make again!

Cha Cha's White Chicken Chili

Reviewed: Nov. 13, 2004
Wonderful flavor but very spicy! A little too much so for my taste but my husband felt it was "perfect"! Used 1 pound of dry small white beans that I precooked with a little minced garlic instead of canned beans. Also makes many more than 4 servings. Will definitely make again but probably with only 1/2 can jalapenos. Update. Made this for people who don't "do" spicy and totally eliminated the jalapenos and only used 1/2 tsp cayenne. Was great with wonderful flavor. Served with cayenne on the table so we could spice it up some.

Rempel Family Meatloaf

Reviewed: Nov. 18, 2004
Flavor was good but the cheese made the meat loaf pretty greasy and the onion soup made it a little salty. Husband loved it though.

Very good and easy to prepare. Husband enjoyed it. Will try making with Italian sausage instead of ground beef next time.

Mexican Spiced Turkey Tortilla Soup

Reviewed: Dec. 1, 2004
This was excellent with wonderful flavor! I also added a can of kidney beans to add more body to soup. Next time I'll use less water as it was kind of a thin soup and we like soup thicker. I also used cheddar cheese instead of jack because that was what I had. Will definitely make again!

Southwestern Bake

Reviewed: Dec. 4, 2004
I should have read the reviews before making this. It wasn't bad but just very bland. Not spicy at all even though I used Rotel tomatoes in place of the salsa. Probably won't make again.

Easy Potato Sausage Soup

Reviewed: Dec. 7, 2004
Very good soup! Used suggestions of other reviewers and added 3 stalks of celery and browned it along with the sausage and onions. Also added 3 fresh carrots instead of frozen, used 1 can of chicken broth in place of some of the water and used 1.5 cups of potato flakes to make it nice and thick. Also added a little cayenne pepper and topped the soup with a little shredded cheddar. Soup had excellent flavor but was a little greasy so next time I'll omit the margarine and try using turkey sausage. Will definitely make again though.

Carol's King Ranch Casserole

Reviewed: Dec. 10, 2004
Very good casserole. Husband loved it! I made a few changes based on what I had on hand. Used green pepper instead of red, plain cooked pinto beans with added 1 T. chili powder and 0.5 tsp cumin, and 16 corn tortillas instead of flour. Had wonderful flavor and was not dry at all. Will definitely make again.

Peach Cobbler V

Reviewed: Dec. 12, 2004
I've made this recipe for years and it's always a hit. My recipe simply calls for 1 quart of fruit, any kind. I've made it with cherries and apples as well as peaches. It's incredibly simple to make and always turns out wonderful.

This was a good stew but not as spicy as I expected. Next time will add a couple of jalapenos or something to spice it up.

Spicy Party Pretzels

Reviewed: Dec. 22, 2004
Boy are these good! Only changes I made to the recipe were to reduce the oil to 2/3 cup, use garlic powder instead of garlic salt and add 1 T. Worchestershire sauce. Just enough heat to get your attention! Next time I may try decreasing the oil a little more and may try adding cereal squares and nuts to the pretzels. Thanks for the great recipe!

Whit's Chicken Enchiladas

Reviewed: Dec. 23, 2004
These were very different but good. Not much like enchiladas but they have very good flavor. Only change I made to the recipe was to add some onion with the peppers and used colby-jack cheese because that was what I had. Husband loved it though not quite hot enough for him. Next time will use 2 jalapenos. Will certainly make again.

Didn't care for this fudge. I was looking for a recipe that made a smaller batch than the marshmellow cream fudge but this isn't it. Thanks anyway.

Bean Soup

A great "comfort food" kind of soup! I did increase the veggies and added about 0.5 tsp cayenne pepper for zip. We loved it and will definitely be making it again.
