Salsa Chicken Rice Casserole

I found this to be very bland until I "bumped it up"! Added about 2 tsp cumin, 1 tsp chili powder and 1/4 tsp cayenne. Also added 1/2 cup sour cream and 1/2 cup frozen corn. I also topped it with a few crushed tortilla chips which added a nice texture change. At the table I served it with additional salsa and hot sauce on the side. Once the heat was added we loved it. My husband actually had seconds! Will definitely make again with the above changes.

Peanut Butter Chip Chocolate Cookies

One of the best cookies I've ever tasted! Really wonderful and not difficult to make either! Will definitely make again........lots of times! Grandkids will love them!

Cherry Tomatoes

This was pretty good! I used lots more tomatoes because there was way more dressing than I wanted! Also used 1 tsp oregano and 1 tsp basil and added some garlic powder. Let the salad sit in the refrigerator for a couple of hours before eating. That improved it. Worked well to use up an abundance of grape tomatoes out of the garden.

Texas Sheet Cake V

This cake is extremely rich! Too rich really for us. I guess I should have known when it called for more than 1/2 pound of butter! Anyway, we prefer our old recipe for chocolate sheet cake that calls for buttermilk. Lots less fat too!!

Garden Pasta Salad

Didn't have bell pepper or cucumbers so subbed sliced zucchini instead. Also added fresh grape tomatoes out of our garden. Only added one bottle of salad dressing and it was plenty for us. Could have probably done with less. Really good though. I like all the fresh veggies in it. Will try it with bell pepper and cukes next time.

Ham and Swiss Casserole

Excellent! This is by far the best recipe I've tried for leftover ham. Followed the recipe exactly except subbed cream of mushroom soup because that's what I had. Also was a little short of sour cream so just added about 1/2 cup of the pasta water. Made a huge batch! Easily 6-8 servings. Will freeze some for later and enjoy the leftovers.

Simple Ranch Chicken Macaroni Salad

I made a few changes but really liked this salad. I used small shells instead of elbow macaroni. I also added a couple of chopped green onions. Used leftover chopped turkey instead of canned chicken. Because I found it a little too salty initially I increased the turkey to 2+ cups and added 2 diced hard-boiled eggs and that seemed to take care of it. Served it on a bed of lettuce with cherry tomatoes as a garnish. Very tasty!

Yogurt Chicken

Gave this recipe a try because of all the positive reviews. Unfortunately we really didn't care for it. It was way too "tangy" to suit our tastes. It wasn't inedible but there are lots of other ways to cook chicken breasts that we like better!

Exquisite Pizza Sauce

Really good pizza sauce! The best I've tried and I've tried a lot! A little sweeter than I like so might decrease the honey next time but otherwise perfect! We don't like our sauce too thick so this actually made enough for 2 pizzas for us. I just froze the other half to save for next time.

Country Seed Bread

Bread had a nice texture but I wasn't very fond of the flavor. That's probably due to the fact that I didn't have flax seed so subbed sunflower seeds. Will try it with flax seed before I give up on it.

San Francisco Sourdough Bread

Peanut Butter Clusters

What a wonderful, healthy snack!! I melted the peanut butter chips in the microwave then added the remaining ingredients. Couldn't get much easier! I'm anxious to make them for my grandkids for a snack!

Green Bean and Blue Cheese Salad

This is a great salad! I use a little less blue cheese to cut the calories a little bit and mix the salad dressing using the lower fat recipe. I love to keep this in the refrigerator to snack on.

Corned Beef and Cabbage

I made a few changes to this recipe but it turned out delicious! Omitted the potatoes, carrots and cabbage but used the recommended seasonings to cook the corned beef. Also added 1 stalk of celery for flavoring and used entire spice package. Cooked in a crock pot on high for 5 hours and it was perfect! This will be my new recipe for preparing corned beef!

Oatmeal Sourdough Rolls

Wonderful sourdough rolls. Only change I made was to sub 1 cup wheat flour for 1 cup of white flour to make it a little healthier. Will definitely make often!

Easy Hawaiian Chicken Packets

Really very good. I did make a few changes. Cut the chicken into cubes and marinated it for about 30 minutes then placed all ingredients into a casserole dish and baked it for about 35 minutes at 350 and served over hot rice. Next time I think I will add garlic powder and a few red pepper flakes for a little added zip. I also may try doing it as a stir fry so I can thicken the sauce a little bit. Regardless it was very good and super easy!

Italian Dressing Mix

Excellent Italian dressing however I did make a few changes. Instead of garlic salt I used 1 1/2 tsp garlic powder and 1 tsp minced garlic (dry) and kosher salt instead of table salt. When mixing the dressing I used 2 T. balsalmic vinegar, 2 T. red wine vinegar, 1/3 cup olive oil and 1/3 cup water. To that I added 3 T. mix because we like a more zesty Italian dressing. It's wonderful and I will not be buying Good Seasons Mix again!

Pork Chops with Garden Rice

This was a very good and healthy way to prepare a one-dish pork chop meal. We really enjoy the lightness of it. Next time I will try using Rotel tomatoes instead of plain for a little zippier flavor. Also used brown rice instead of white.
