Baked Beans II

Really yummy!! Followed the recipe exactly with the exception that I omitted the bacon and added a package of beef hot dogs. Wow!! Added a tossed salad and enjoyed a great, simple dinner!

Peach Whirligigs

This is really good! Mine ended up too much for an 8x8 pan. Had to use a 9x13 but that worked fine. Wonderful flavor! Will definitely make again but will use less water as suggested by others.

Peach Ice Cream

Really wonderful! Made it with incredible fresh peaches and I'm sure that helped but it was really creamy and delicious. Will try to remember to chill the mixture thoroughly before putting it in the freezer next time to help speed the time. Will most certainly make it again!

This was pretty good. Liked the fact that it was so light (no fat). Not sure I am crazy about the chili powder. Might try cajun seasoning or cumin instead.

Mexican Lasagna I

Really easy and good! Husband loves it! Used 1 can Rotel, 1 1/4 cup salsa and 1 1/4 cup water. Also used pepper jack cheese and put a layer on top of each meat/bean layer. Omitted sour cream/olive layer because husband doesn't like it. I topped my portion with ff sour cream and chopped cilantro. Will definitely make again!

Carrot Cake III

What a wonderful recipe! Did use 1 cup brown sugar and 1 cup white sugar instead of 2 cups white and 3/4 cup oil and 1/2 cup applesauce to cut the fat content. Otherwise followed the recipe exactly. Loved it!! Will definitely make it again!

Sweet and Spicy Stir Fry with Chicken and Broccoli

I made a number of changes based on what I had on hand but found that it was still excellent! Had zucchini from the garden that needed to be used so subbed that for broccoli. Added also red, yellow and orange peppers, julienne carrots and water chestnuts. Also used teriyaki sauce instead of hoisin. Did make more sauce because I had more veggies. Thickened with a little cornstarch just before serving and topped with a few peanuts. Great stir fry recipe!

Island Cookies

YUMMMMM!!! Doc says they're better than chocolate chips which is amazing! Made them with semi sweet chips and walnuts. My coconut was a little dry so added about 1 tsp of water to the dough. Update: Made them again and the dough was very dry, even after the addition of the water. Changed the recipe so that next time I will try using 2 eggs instead of one.

Snappy Green Beans

Wonderful!!! Used frozen green beans, real bacon bits and cider vinegar. Sauted onion (about 1/2 cup) in 1 T heart-healthy margarine. Added cooked green beans, vinegar and bacon bits ans sauted about 10 minutes. Fabulous!!!

Fiesta Chicken and Black Bean Enchiladas-dup

This was really good! Used corn tortillas instead of flour and subbed pepper jack cheese for 1/2 the cheddar. Also omitted the cilantro until time to serve it because husband hates it! Also used full can of enchilada sauce and added a little bit if garlic and cumin to filling. Will definitely make again!

Sweet and Sour Pepper Pork

Wow! This is one of the best stir fry recipes I've ever tried. Did make a few changes. Used some red as well as some green peppers and a few juilienne carrots, subbed brown sugar for white and decreased it to 1/3 cup. Added a can pineapple chunks and used 1/2 cup juice instead of wine and water. Added 3 Tbso chili garlic sauce to the sauce. Also added a small can of water chestnuts. Lots of changes but it was really wonderful! Will certainly make it again! I think it would be good with chicken too.

Easy Pleasy Mac N Cheesy - US Navy Style

This was good but much "richer" than what we usually eat! And I used fat free sour cream and reduced fat Velveeta. I think we'd like it better if it was a little "lighter".......and would feel less guilty after eating it!
