Crunchy Apple-Pecan Slaw

Made this for dinner last night and really didn't care for it. It seemed a little bland, but by tonight it was terrific! It just needed time for the flavors to blend. The only changes I made were to use dried cranberries instead of raisins (because my raisins were pretty dry) and to use lime juice instead of lemon juice. Will certainly make again. Would be great for a potluck.

Autumn Harvest Cookies

Husband who is the cookie expert said this is 5 stars! Followed the recipe exactly except I didn't have orange extract so just doubled the vanilla. Used a little old fashioned oats (all I had) but mostly quick oats. Not super sweet but that works for me!

Southwestern Chicken and White Bean Soup

This was really good after I made a few changes. I made it on top of the stove cooking the frozen chicken breasts along with everything else in 2 cans chicken broth a 1 can rotel instead of salsa. It was too mild for us so I added one chopped jalapeno with seeds, 1 T. chili powder and 1/4 tsp cayenne. Topped it with shredded cheese. Yummy!

Easy Peach Crisp I

After reading other reviews I cut the butter into the cake mix. Added 1 tsp cinnamon and a dash of nutmeg to each the peaches and cake mix. I also added about 2 tsp corn starch and a tsp vanilla to the peaches. I omitted the sugar except that I sprinkled the top of the cake mix with just a light dusting of brown sugar. Baked at 350 for about 40 minutes. Took to a church potluck and it was really a hit!

Apple Pie Coffee Cake

Really good! After reading other reviews I did add about 1/2 cup finely chopped walnuts to the batter and I was out of almond extract so just used vanilla. Also added a couple of drops of vanilla to the glaze. Will certainly make again!

World's Best Pasta Sauce!

This was really a good sauce...nice and thick! I didn't have the Italian sausage so added a little extra seasoning. It was a little sweeter than we prefer so will decrease the sugar next time but will definitely make again! Probably the best homemade sauce I've ever made!

Onions Au Gratin

This was pretty good. The onions were surprisingly sweet. Didn't have cream so used milk instead. I'm sure the cream would have made it richer but I don't know that it needed it. Will make again.

Mom's Zucchini Bread

Really yummy!! Only change I made was to sub 1 cup of brown sugar for 1 cup of white sugar as someone else recommended. Took 60 to 65 minutes for mine to get done completely. Husband who wasn't sure he'd like "zucchini bread" loved it! Works for me!

Boston Baked Beans

Absolutely wonderful! Only change I made in the recipe was that I didn't have enough bacon so I added about 1/2 cup diced ham. After they were cooked they didn't seem very "saucy" so I added about 1/4 cup quality bbq sauce. That did it. They are by far the best baked beans I've ever had!

Best Baked Chicken

After reading other reviews I used low sodium soy sauce, celery seed and garlic powder but still found it a little salty. Husband didn't think so though. Chicken was very nice and juicy as well as flavorful. Might try using a little less of the stuffing mix. I suspect that's where the salt was.

Cherry Almond Coffeecake

Really wonderful and so very easy to make. I didn't have enough sour cream so made up the difference with mayo (and both were "light"). Worked great! Will definitely make again! Thanks for sharing.

Hot Italian Giardiniera

Yummy! I did modify it a little. Used one large green and one large red pepper, 2 large serrano peppers thinly sliced instead of jalapenos, 2 celery, 3 carrots, 1 1/2 cups cauliflower, 3 large cloves garlic, 1 tsp Mexican oregano, 1 1/4 cups cider vinegar, 1/2 cup canola oil & 1/4 cup water. Omitted the olives because husband doesn't like them. Fabulous!

Kay's Spaghetti and Lasagna Sauce

This was really nicely flavored. Used Italian sausage instead of ground beef and added 1/2 tsp red pepper flakes and 1 tsp fennel seed in addition to the other seasoning. The sauce was a little think so next time will add some tomato paste to see if that won't thicken it up. Either that or cook it down a little bit. But I will make it again.
