Super Duper Slow Cooker Beef Stroganoff

This was wonderful! Followed the recipe exactly except omitted the red wine because I didn't have any. Used water instead. I found that the sauce was a little thick but maybe some of the moisture cooked away. Will watch and maybe add some additional water next time. Flavor was fabulous! My guests loved it!! Will certainly make again. Thanks!

VanVoorst Ham Casserole

This was really good and a bit different. I followed the recipe exactly except that I used fat free sour cream and whole grain penne instead of spirals. I could taste the mustard but that was OK with me as I like it but it might be too much for some. Will definitely make again!

Fried Cabbage II

This was really tasty! I would perhaps add a little more vinegar and sugar next time for a little more sweet and sour flavor but I really did like it. Did drain off most of the bacon grease before cooking the onion. Just couldn't leave that much grease in the pan. Will certainly make again!

Simple Hamburger Stroganoff

WOW! This was great!! After reading many reviews I added minced garlic and a little Worcestershire sauce, decreased the cream cheese to about 4 oz, used fat free sour cream and because my family isn't fond of mushrooms left those out and subbed a can of cream of celery soup for one of the cream of mushroom. Fabulous! Will certainly make again!!

Sweet and Chunky Tomato Soup

YUM!! Made this with my fresh garden tomatoes and a red bell pepper. (Didn't have a yellow one.) I also added about 1/4 tsp cayenne pepper just because I love just a hint of heat in soup. Absolutely loved this soup and the fact that it's very low calorie only made it better! Made a wonderful lunch! Will certainly make again!

Mediterranean Chickpea Salad

This was really good! And a great way to use up some of the fresh garden cherry tomatoes and cucumbers. I omitted the parsley because I didn't have any and only used 2 Tbsp olive oil (because I don't like much dressing on salads). It tasted better after it sat for a while and let the flavors blend. And so healthy!!

Rosemary Ranch Chicken Kabobs

We weren't very fond of this. Maybe it was the Worcestershire sauce or maybe the rosemary but I think we'll go back to our old standby of olive oil, lemon juice and garlic.

Cauliflower Salad

This was pretty good. I subbed red pepper for the peas because I don't like peas and did omit the bacon to save calories but it was a nice change and fit well into my low carb diet plan. Thanks!

Cheeseburger Soup I

This is really good and pretty easy to put together. I also like that it doesn't make a huge batch as there are just two of us. (This way we don't eat it for a week!) Husband kept saying, "It's a do-over!" I did spice it up with a dash of cayenne and some dry mustard. Really comforting on this cool rainy night.

Great Pimento Cheese

I wouldn't call this Pimento Cheese but it sure is good!! I used fat-free and low-fat ingredients when I made it. Made it initially to stuff into mini peppers for Super Bowl but also stuffed celery with it. Then decided to spread some on flour tortillas, fill them with veggies(peppers, cukes, grape tomatoes, sprouts, olives etc), roll them up and slice them for another appetizer. They were a huge hit! Will definitely make again!

Garlic Pork Roast

This was good! Cooked it the recommended 6 hours and my pork roast fell apart totally when I tried to slice it! Was really over cooked! Maybe my crock pot is a little too hot but that part was a problem. We were left with shredded pork. Flavor was good though.

Chocolate Trifle

Wow! This was really wonderful! Very rich and delicious! I did save a few calories by using sugar-free pudding and light whipped topping. Also didn't have the chocolate bar for garnish so used Oreo cookie crumbles instead which worked very well. Will certainly make again!

Absolutely sinfully delicious! So creamy and wonderful! Topped with a little more whipped topping and a couple of chopped up peanut butter cups. Was a huge hit with my guests!

Chef John's Chicken and Dumplings

This was really GOOD!! I used my old dumpling recipe because I didn't have self-rising flour or creme fraiche but followed the rest of it exactly. Mine was a little "brothy"; might try adding a little more flour next time. Added full 1/2 tsp cayenne pepper. Made it a little warm but certainly not too hot! My daughter ate 3 helpings!! Will certainly make again!

This was wonderful! After reading reviews and because my peaches were pretty sweet to start with, I halved both white and brown sugars in the peaches and in the batter. The result was perfect!
