Three Bean Salad

Very good recipe but too much dressing for our taste and a little too sweet. Followed the recipe exactly except that I added 2 cans of green beans. Next time I will decrease the entire dressing ingredients and the sugar to 1/4 cup. Otherwise delicious!

Sweet-and-Sour Coleslaw

This salad was terrific! I used a whole medium sized head of cabbage and a whole jalapeno pepper diced very fine. There was plenty of dressing. Husband absolutely loved it but it was just a bit too spicy for me. Will use a little less jalapeno next time but there will definitely be a next time!

Enchiladas Suizas

This was good but not spicy enough to suit our tastes. I didn't fry the tortillas (to reduce the fat) and they turned to mush. Don't know if that's because I didn't fry them or just the kind of tortillas I had but that was kind of nasty. May try again with some adjustments.

Hearty Ham Casserole

I made several changes in this recipe. Subbed sliced mushrooms for the corn, used mushroom soup and .5 cup milk for the white sauce, added 1 T. dijon mustard, didn't saute the onion in butter (to save on fat) and diced the cheese and added it to the dish before baking. We really liked it with the above changes! Nothing gourmet, just good comfort food!

Party Potatoes

I have made these several times and they're always well received! I follow the recipe exactly except add a little grated Cheddar cheese to the top instead of butter. Really wonderful and I love that I can make them ahead of time and just pop in the oven to heat.

Crispy Cucumbers and Tomatoes in Dill Dressing

I have made this recipe lots of times and we really love it! It's wonderful with fresh-from-the-garden tomatoes and cucumbers. It's our favorite summer salad.

Broccoli Casserole II

Very tasty. Only changes I made were to use olive oil instead of margarine and Velveeta instead of cheese spread with jalapenos because that's what I had on hand. I think we would have liked the addition of jalapenos so will try that next time. Makes a huge portion! We have lots of leftovers but that's a good thing. Will definitely make again. Update: After making this many times I tried replacing 1/2 the Velveeta with pepper jack cheese. What a wonderful change!! Added just enough spice but really no heat. We love this and it changed it from 4 stars to 5!

Apple Raisin French Toast Strata

I made this for my son's family when they were here visiting and everyone loved it! Absolutely delicious! Only change I made was to add vanilla to the egg mixture. Will definitely make again! Thanks for the great recipe!

Granny Mabel's Best Bar Cookies

Wow! These cookies are really rich! I followed the recipe except I decreased the butter to 1 cup as per others suggestions. Husband just kept saying "Yum!!!" A little rich or me but will make again because he loved them so much.

Angela's Potatoes

Made several changes to this recipe. Cooked the potatoes in the microwave in a covered casserole dish about 6 minutes with 3T. water. Then placed cheese and 3/4 c. milk in another microwave bowl and heated until cheese was melted; added ranch dressing mix and poured over potatoes and microwaved for another 3 minutes with lid on. Let set about 5 minutes to complete the cooking process. Note that I left butter out completely which reduced the fat content and also reduced the salty taste. Husband LOVED them! Will definitely make again.

True Lancashire Hot Pot

Erica's Delicious Slow Cooker Beef Roast

The garlic in this was overwhelming. Four cloves of garlic was way too much for a 2 pound roast, at least for us. Will go back to making my usual pot roast. Thanks anyway.

Green Chile Chicken Stew

WOW!! This was wonderful! I used 2 very large boneless chicken breasts instead of a whole chicken and subbed two very large jalapenos with seeds instead of the habaneros. (Call me a chicken!) It was just right for me; husband added a little more hot sauce. Love the fact that it's more of a chicken vegetable stew and doesn't contain beans as most recipes do. Will most definitely make it again!

Quick and Easy Chicken Spaghetti

This was a very different recipe but the more we ate it the better we liked it. Used penne pasta and fresh mushrooms but otherwise followed the recipe as written. Unusual flavor but we liked it and will probably make again. Next time I'll try adding some diced onion for flavor.

Cottage Cheese Chicken Enchiladas

Excellent flavor though not quite hot enough for our taste. Only problem was that our tortillas cooked to mush but that may have been a result of the brand that I used. Will try again adding maybe some jalapenos and using a different brand of corn tortillas. Definitely worth another try.

Jay's Hearty Breakfast Skillet

I've made something similar to this forever for a quick evening meal. However, I use frozen hash browns instead of fresh potatoes and when I'm ready to cook the eggs I make indentations in the potatoes and drop the eggs in them, sprinkle all over with shredded cheddar, cover and cook on medium low heat till done. Yummy!

Potato Potluck Dish

Not exactly a low-cal dish but this is absolutely wonderful!! I really had more sauce than I needed but maybe I didn't use enough potatoes as I just guessed at the amount. Flavor was wonderful and husband ate 3 servings! Will definitely make again.
