Southwestern Turkey Casserole

I made so many changes to this recipe that I probably shouldn't rate it. First I used about 2-3 cups chopped turkey. I omitted the cream of mushroom soup and added one can of tomatoes with green chilies. Also added 1 tsp ground cumin and 1 tsp fajita seasoning and stirred the turkey, soup, chilies, tomatoes, sour cream, 1/3 cup chopped cilantro and spices together and let sit for about an hour in the refrigerator before assembling the casserole. I then layered it as directed. After baking I sprinkled with sliced green onions. I served this with salsa on the side as it wasn't spicy enough for my husband. We both liked it a lot after the changes. It's a really good and different way to use the leftover turkey.

Cinnamon Glazed Walnuts

Wow are these good! And really easy to make. Very subtly sweet with just a hint of heat. I did try making a second batch using Splenda. Don't try it! Not nearly as good! Will use these on my Christmas gift trays this year.

Peanut Butter Cookies with Chocolate Chunks

This is a great cookie! Followed the recipe exactly except used 1 cup chocolate chips for chocolate chunks. Wonderful texture and flavor. Will definitely make again.

Chicken Tortilla Soup III

Yummy soup!! Followed recipe exactly except only used 2 c. half and half after reading other reviews that soup was a bit thin. Not quite spicy enough for husband but a little cayenne pepper took care of that. Will make again but not often due to high calorie count.

Kathy's Roast and Vegetables

This made a very tender a flavorful roast with lots of tasty gravy. Only issue I had was that the vegetables seemed a little salty so next time will only use 1/2 pkg onion soup mix and some fresh onion for the onion flavor. But there will definitely be a next time! Roast was delicious!

Vegetable Beef Minestrone

Excellent soup! Did double the beef broth as per other reviewers suggestion. Used great northern beans instead of garbanzos. Next time will double the crushed red pepper or add cayenne for some additional heat but otherwise a great recipe! Will definitely make again!

Peach Pecan Sweet Potatoes

Cinnamon-Glazed Sweet Potato and Apple Bake

What a wonderful recipe!! I omitted the squash and used only sweet potatoes but otherwise followed the recipe exactly and it was absolutely delicious! Way better than the usual candied sweet potatoes. Will most definitely make again.

Sesame Green Beans

Hawaiian Banana Nut Bread

This was the best banana bread I've ever eaten!! Used 1/2 white and 1/2 brown sugar and subbed raisins for the cherries and it was phenomenal! Will definitely make again!

Roast Pork with Maple and Mustard Glaze

I liked this a lot but my husband wasn't fond of the sweetness. Followed the recipe exactly except omitted the salt and used low-sodium soy sauce. Will make it again but not ofter.

Cottage Meatloaf

Grilled Salmon I

I don't like salmon but am trying to eat heart-healthy so decided I needed to eat fish. This recipe was quite good! I used teriyaki marinade instead of soy sauce and brown sugar and subbed olive oil for vegetable oil. We liked it! Will undoubtedly have this again!

Chicken Mexicala

This was very good! After reading others reviews I added one fresh finely chopped jalapeno and about 1 tsp cumin to the sauce. In addition I added 1/2 cup milk and 1/2 cup chicken broth (from cooking the chicken breasts) to "stretch" the sauce. To eliminate the fat I didn't saute the chilies and onions but combined the soup, evap milk, milk, broth, onions, green chilies and jalapeno and micro cooked for 8 minutes before adding the cooked chicken and putting the casserole together. Husband topped it with salsa but it was spicy enough for me without it. Will definitely make again.

Excellent recipe with great flavor! Followed recipe exactly. Next time will probably only use 1/4 cup sesame seeds and only 1/2 tsp five spice powder but will add a little garlic powder. These changes are just for personal preference but will definitely make again!

Cream Cheese Basil Summer Squash

This is the easiest squash recipe ever! And it's delicious! What more could you want? Only change I make in the recipe is to take the suggestion from another reviewer and add one can or Rotel tomatoes for spice. I have even made it and frozen it for later. (We have lots of squash in the garden.) Will continue to make often! Thanks for the great recipe!

Teriyaki Marinated Chicken

This is an excellent marinade for grilled chicken! I used apple juice instead of pineapple because that was what I had. I also used teriyaki sauce instead of soy sauce and added about 1 tsp of sesame oil for flavor. Chicken was very moist and flavorful! Will definitely make again.

Coffee Roasted Beef Chuck

The meat had good flavor and was tender but it was sooo greasy (due I'm sure to the cut of meat) and was quite bland! Will probably not make again because there are lots of other ways to cook a roast that we like better. Sorry.
