Craig's Cocktail Sauce

I just mixed this up to go with our shrimp for dinner and it's wonderful! I adjusted the recipe to 4 servings and didn't have lemon juice but had a lime so used lime juice. Also added a little extra horseradish to suit our taste. This is a great cocktail sauce! Won't be buying the prepared stuff again!

Fresh Peach Pie II

This was really good flavored! Texture was a little odd though. I only made one pie, cut the sugar to 1/2 cup and the water to 1 1/2 cups. Next time I will cut the cornstarch to 2 T. as it "jelled" really quickly and firmly! But will definitely make again. Will try with Splenda and sugar-free Jello to eliminate the sugar. Addendum: Made the second one sugar free using 1/2 cup Splenda, 2 T. cornstarch, 1 cup water and sugar free Jello. It was great!

Wilderness Place Lodge Cookies

These cookies are absolutely the BEST! I followed the recipe exactly except that I halved everything and the cookies are perfect. I did plump the raisins in hot water for about 15 minutes while I was assembling the other ingredients but otherwise did nothing else different. Baked them for 11 minutes and they are beautifully soft and chewy! Will definitely make again!

Honey Mustard BBQ Pork Chops

This was pretty good. Marinated chops for about 2 hours then grilled them on the gas grill. Lots of honey mustard flavor. Not sure I still don't prefer chops grilled with just a little garlic powder but husband who likes honey mustard flavor better than I do really liked it. Will make again but not often.

Chicken Fried Chicken

This was good and very easy. I added about 1/2 tsp garlic powder to the breading mixture. We liked this but found the breading a little "heavy". Not sure what can be done about that. Very flavorful though.

Pork Roast with Sauerkraut and Kielbasa

WOW! What a great way to prepare pork roast!! I think it was the best pork roast I've ever eate. My husband really loved it. Said it reminded him of the way his mother used to fix pork roast 50 some years ago. Will definitely make again.

Summer Squash Chicken Alfredo

This was excellent! We have an abundance of summer squash from the garden and are getting a little tired of it so decided to try this for a little variety. I sauted the chopped garlic in oil for just a minute or two before adding the cubed the chicken and squashes. Just before all were done I added about 1/2 cup slice mushrooms and the diced sun-dried tomatoes. I then tossed in the cooked hot pasta and the Alfredo sauce with milk along with 1/4 cup real bacon bits (instead of cooking and crumbling bacon) and heated everything through. I omitted the almonds and I added the Parmesan at the table because some don't like it. We loved this and with the changes I didn't dirty all the dishes in the kitchen. We'll definitely make again! Excellent light summer salad! Wonderful flavor and easy to prepare as well. Might add a few frozen peas and some hard cooked eggs next time for variety. Will definitely make again!

Irish Potato Casserole

One half cup of butter for two cups of potatoes is way too much butter! The potatoes were actually greasy! And had very little flavor. I won't be making this again! Sorry.

Quick Classic Gazpacho

This is wonderfully fresh tasting and delicious. A very healthy and tasty way to get your veggies in! Followed the recipe exactly except that I added about 1 tsp cumin and used cilantro in it. Also used basalmic vinegar since I didn't have sherry vinegar. This is something that I'll make often! Thanks!

Easy Cajun Grilled Veggies

Really good side dish! And a good way to use the garden's bounty! I don't have a grill basket and didn't want to mess with skewers so just cooked it in a very hot skillet. A little too much cayenne for us but otherwise very good. Loved the onion wedges with the squash! Will definitely make again with a little less cayenne!

Summer Salad

Really a nice fresh-tasting salad and nice to look at too with the variety of colors. I found it a little bland so added about 1 teaspoon of ranch dressing mix. That did it! Really great taste and good for you too! What more could you ask for? Will definitely make often, especially when the garden squash and zucchini are about to take over!

Zucchini Nut Cookies

Really good flavor but the dough was a bit dry. Maybe my zucchini wasn't as "wet" as some. I don't know. Not sure how to fix that. Maybe cut the flour a little. They tasted like they needed something so I put a light layer of cream cheese frosting on them. That did it! My neighbor who hates zucchini loves them!

Sweet and Sour Zucchini Salad

This salad was a little too vinegary for us. I think if I make it again I will use 1/2 vinegar and 1/2 water. Also the onion soup was a little strange. I think I would like it better with fresh onion. Sorry.

Summertime Coleslaw

Very good slaw dressing! Not quite sweet enough for us so added 2 pkts Splenda. Used red wine vinegar and light mayo. Also added a dash of garlic powder and onion powder and omitted celery seed because we don't care for it. Will definitely make again!

Sesame Parmesan Zucchini

Excellent! I used 2 small zucchini, 2 small yellow squash and 1/4 large sweet onion cut into wedges. The cayenne was perhaps a little zippier than I would have preferred but husband loved it! Will definitely make again!
