Pork Roast with Sauerkraut and Kielbasa

Reviewed: Jul. 24, 2006
WOW! What a great way to prepare pork roast!! I think it was the best pork roast I've ever eate. My husband really loved it. Said it reminded him of the way his mother used to fix pork roast 50 some years ago. Will definitely make again.

Summer Squash Chicken Alfredo

Reviewed: Jul. 14, 2006
This was excellent! We have an abundance of summer squash from the garden and are getting a little tired of it so decided to try this for a little variety. I sauted the chopped garlic in oil for just a minute or two before adding the cubed the chicken and squashes. Just before all were done I added about 1/2 cup slice mushrooms and the diced sun-dried tomatoes. I then tossed in the cooked hot pasta and the Alfredo sauce with milk along with 1/4 cup real bacon bits (instead of cooking and crumbling bacon) and heated everything through. I omitted the almonds and I added the Parmesan at the table because some don't like it. We loved this and with the changes I didn't dirty all the dishes in the kitchen. We'll definitely make again! Thanks!

Old Bay® Lady Liberty Seafood Salad

Excellent light summer salad! Wonderful flavor and easy to prepare as well. Might add a few frozen peas and some hard cooked eggs next time for variety. Will definitely make again!

Irish Potato Casserole

Reviewed: Jul. 12, 2006
One half cup of butter for two cups of potatoes is way too much butter! The potatoes were actually greasy! And had very little flavor. I won't be making this again! Sorry.

Quick Classic Gazpacho

Reviewed: Jul. 11, 2006
This is wonderfully fresh tasting and delicious. A very healthy and tasty way to get your veggies in! Followed the recipe exactly except that I added about 1 tsp cumin and used cilantro in it. Also used basalmic vinegar since I didn't have sherry vinegar. This is something that I'll make often! Thanks!

Easy Cajun Grilled Veggies

Reviewed: Jul. 10, 2006
Really good side dish! And a good way to use the garden's bounty! I don't have a grill basket and didn't want to mess with skewers so just cooked it in a very hot skillet. A little too much cayenne for us but otherwise very good. Loved the onion wedges with the squash! Will definitely make again with a little less cayenne!

Summer Salad

Reviewed: Jul. 2, 2006
Really a nice fresh-tasting salad and nice to look at too with the variety of colors. I found it a little bland so added about 1 teaspoon of ranch dressing mix. That did it! Really great taste and good for you too! What more could you ask for? Will definitely make often, especially when the garden squash and zucchini are about to take over!

Zucchini Nut Cookies

Reviewed: Jul. 1, 2006
Really good flavor but the dough was a bit dry. Maybe my zucchini wasn't as "wet" as some. I don't know. Not sure how to fix that. Maybe cut the flour a little. They tasted like they needed something so I put a light layer of cream cheese frosting on them. That did it! My neighbor who hates zucchini loves them!

Sweet and Sour Zucchini Salad

Reviewed: Jun. 29, 2006
This salad was a little too vinegary for us. I think if I make it again I will use 1/2 vinegar and 1/2 water. Also the onion soup was a little strange. I think I would like it better with fresh onion. Sorry.

Lemon Fish Bake

Reviewed: Jun. 22, 2006
This was pretty good though not as crispy as I expected. I used panko bread crumbs and maybe that was why. Will try again with regular bread crumbs.

Summertime Coleslaw

Reviewed: Jun. 12, 2006
Very good slaw dressing! Not quite sweet enough for us so added 2 pkts Splenda. Used red wine vinegar and light mayo. Also added a dash of garlic powder and onion powder and omitted celery seed because we don't care for it. Will definitely make again!

Sesame Parmesan Zucchini

Reviewed: Jun. 12, 2006
Excellent! I used 2 small zucchini, 2 small yellow squash and 1/4 large sweet onion cut into wedges. The cayenne was perhaps a little zippier than I would have preferred but husband loved it! Will definitely make again!

Really tasty! Added about 1/4 cup diced red pepper and one large chopped green onion for extra crunch and flavor. Served over Romaine lettuce. Made a great light lunch!

Easy Grilled Chicken Teriyaki

Reviewed: May 22, 2006
Excellent! Used a cut up fryer and lime juice instead of lemon because that was what I had. Marinated it for about 5 hours then grill on a gas grill. Absolutely delicious! Will definitely make again.

Very good! Reduced the recipe to 4 servings and added 4 small green olives very finely chopped (per another recipe). Was perfect! Will definitely make again and again.

Smothered Green Beans

Reviewed: May 15, 2006
Wow! Tasted like I remember green beans tasting at my southern grandmother's. Subbed 1/4 cup real bacon bits for bacon and sauted the onions and garlic in 1 1/2 tsp of heart healthy margarine instead of using fresh bacon and the bacon grease. My beans were not the most tender but after cooking for about an hour you couldn't tell. Really a nice change of pace from the usual steamed green beans. Will certainly make again.

Broccoli Salad

Reviewed: May 12, 2006
Really a good salad! And healthy too! I added about 2 T. real bacon bits for flavor and blanched the broccoli about 2 minutes to bring out the bright color. Didn't like it much when I first prepared it but after sitting overnight it's delicious! The flavors have really blended. I think it would be good with chopped walnuts instead of the sunflower seeds. That would even make it healthier. Will definitely make again!

Three Bean Salad

Reviewed: May 7, 2006
This is an excellent bean salad! Followed the recipe exactly except used olive oil instead of vegetable oil and omitted the onion powder. Usually bean salad is too sweet for me but this was great and we loved the little bit of heat from the cayenne! Only change I might make next time would be to also add some chopped green pepper for another layer of flavor. Will definitely make again! Update: Made it again using about 1/3 cup diced green pepper and black beans instead of garbanzos. WONDERFUL!

Divine Meatloaf

Reviewed: May 3, 2006
This was an excellent meatloaf! It seemed a little strange when I was making it but it has wonderful flavor and holds together well. Makes a huge portion. Next time I will half the recipe since there are only two of us. In addition, there really is more topping than is necessary so will decrease that. Will definitely make again!

WOW! These are wonderful! Was looking for a recipe for a sweet that was gluten free and yet still tasty. This is certainly that and more! Couldn't be easier to make and is really yummy! My husband says it's a 10 out of 10! Will definitely make again! Thanks!
