Baked Garlic Parmesan Chicken
I use this recipe a lot because chicken is one of the only meats that can be agreed upon in my household and this is so easy! It tastes great and the chicken always comes out moist. My boyfriend took leftovers to work the next day and heated them up in the microwave. He said everyone was raving about how good it smelled! Great recipe.

Spaghetti Pie III
I have made this recipe three times. No one in my household likes bell peppers or onions, so I omitted those every time. The first time I was in a hurry and I kind of just threw it together but it ended up turning out great even though I put the cream cheese mixture on top (versus the sauce) and didn't cover it. The second time I followed it exactly except I didn't have any beef (and no onions or peppers) and no one really liked it (I don't eat beef so I make half with/half without, and it still tasted different from the first time). So last night, I made it for a third time and finalized what makes this recipe great. I use a whole 8 ounces of cream cheese versus the "half of 8 ounces" suggested in the ingredients. I also use more sauce and mix it in with the noodles to make sure they are coated. I also add about a tablespoon of dried basil to the cream cheese mixture. It's delicious and it's certainly something I will make in the future.

Perfect Pumpkin Pie
I tried this recipe for Thanksgiving this year since every year my family ends up running out of time and rushing to the store to by a pie. This time I told them I would just make one. I personally don't like pie in general, but several people that do told me it was great! Also, for those of you who don't know this trick yet when making pies....when you have to cover the edge to keep it from burning, the easiest way is to actually cut a circle out of tin foil (use your pan to measure before filling it with pie filling). You want it about an inch wide and then you can just slip it off and on! No more strips to mess with! Just a tip when you're baking this holiday!
