Absolute Mexican Cornbread
This is absolutely the best cornbread recipe I have ever made. Only made a couple of changes: I didn't have cream-style corn, so used whole kernel, drained, but added cream to make a 15-ounce portion. Also, I didn't have a can of chopped green chilies, so I chopped up some mild pepperoncini that I had in the fridge. Just the right amount of kick. I will serve this with some homemade chicken tortilla soup, topped with chopped fresh avocado. Almost too good to be true. Yes, my version is high fat; but for the once-a-year that I make cornbread, this is the recipe I will always use.

Grapefruit Bars
This recipe is fantastic, and thanks to other reviews, I did make some changes, although the biggest change was due to only having 1 egg in the house . I doubled the juice and zest and used butter, not shortening; then I cut the flour to 1 1/2 cups, cut the soda to 1/2 tsp., just a sprinkle of salt (because the butter was salted), and used 1 tsp. ginger. Baked them in a 6x10 pan for about 20 minutes, testing with a toothpick. They turned out totally perfect; and the ginger, in my opinion, is a much better complement than cinnamon. A nice, clean taste that showcases the grapefruit-ginger combination.

Strawberry Oat Muffins
These are the best muffins I have ever made. I didn't have fresh strawberries, so I used a half-cup of frozen berries (all I had left in the freezer), plus a half cup of frozen cranberries, and added 1 tbsp. of flour. Also topped them with a streusel mixture of equal parts of flour, butter, and oatmeal plus 1 tbsp. sugar, blended in my food processor. Then baked them in a jumbo muffin pan; I have six of the biggest and most beautiful muffins, so tender and delicious, that I have ever made.
