Spiced Sweet Roasted Red Pepper Hummus
I detest hummus, but my family LOVES it. I made this, and they loved it. Just a few notes, from other observations. A 4 oz jar of roasted red pepper = a small or 1/2 large pepper. I did broil it for 7-8 minutes on foil, then steamed it in a baggie for 15 to get the skin off (as someone suggested, which worked great). No tahini, but I found a site for substitutes: 3 parts peanut butter and 1 part sesame oil, which also worked great. Added the 1 Tbs olive oil to fluff it a bit. Swapped the parsley with cilantro (good substitute). So essentially, other than the right substitutes, and one added Tbs of olive oil, I made the recipe as is. Go for it, if your family likes hummus.

Lazy Man's Pierogi
I'm from WNY, too, as others have noted. As a FYI, Lazy Pierogi are not pierogi. They are a whole other dish. A quite popular staple at just about every Polish event you go to. And the variations noted in these reviews are typical variations depending on whose Mom gave you the recipe. We use a version with kielbasa, 1/4 # bacon, undrained sauerkraut, touch of Worchestershire and garlic--in addition to what's noted.

Greek Hamburgers
The fam wanted burgers, and I wanted Greek. They got their burgers, and I got my Greek. So, I did add egg and bread crumbs to bind ( remember, the fam had regular burgers, so I could split an egg); will likely use tzatziki next time. I had a Greek seasoning mix, so I used that. No goat cheese, so I used more feta. Tomato slice, onion slice, and tzatziki on top, and I was in heaven. And my daughter was wondering why she didn't ask for Greek, too. Juicy and flavorful.
