Truck-Stop Buttermilk Pancakes

I was a little skeptical that this would turn out. I had no buttermilk so I had to make my own with milk and vinegar. It worked fine and everyone enjoyed the pancakes. Much better than a mix out of a box and I halved the recipe for my family of 5 and I still had 12 pancakes left over. No problem, because they freeze so well. Pop em in the microwave for a bit and the kids enjoyed pancakes in the middle of the week!

Black Bean Salsa

Absolutely delicious! I have made this at least 10 times. It is definately a favorite among women. I leave out the cilantro and scale it down a bit. It makes a ton. I have also used a can of regular corn. It is always a hit and I think it is expected of me to bring it now. It is so easy to make so that is no problem!

Sweet Potato Pie I

I've been making this recipe for at least 4 years. My father in law said it was the best sweet potato pie he had ever had and I get compliments every time I make it. I do strain the potato mixture to make it smooth.

Old Plantation Rolls

I made this the day before Thanksgiving. I used a whole packet of yeast. We warmed them in the oven for a few minutes and they were fabulous! Reminds me of my Grandmothers.

Hot Mexican Spinach Dip

This was wonderful. Everyone asked for the recipe. I omitted the black olives and red wine vinegar. It's a keeper!
