Chicken and Sausage with Bowties

Reviewed: Oct. 17, 2014
We just finished our yummy dinner. Thank you for the great recipe Patricia! The only thing I did differently was use hot italian pork sausage instead of turkey. I bought pork sausage because I didn't read the ingredient list carefully before my grocery shop. I cooked the sausage a few minutes before adding the chicken, and it all came out great! This would be fabulous in sandwiches. Next time I make it I will double up the recipe except for the pasta. Add half the sauce to the pasta and save half for grilled french roll sandwiches the next day. This is part of our regular rotation for sure!

Chef John's Sausage & Shrimp Jambalaya

Reviewed: Oct. 1, 2014
Yummy and easy. I didn't have shrimp, so I used chicken sausage only. I also didn't have diced tomatoes on hand, so I added a 1/2 cup of a nice, organic spaghetti sauce in its place. I replaced the green pepper with a red pepper, again, what I had on hand. I honesty don't think you could mess this lovely, easy Jambalya up! Thanks for the great recipe Chef John! I will make is as directed next time! I'm sure it will only be that much more tasty!

Italian Chicken Sausage Risotto

Reviewed: Oct. 1, 2014
Great recipe. I made it as directed. The dish took more like an hour to reach perfect risotto consistency. I added the three cups chicken broth all at once. I was tempted to do it one cup at a time like other reviewers mentioned is typical for risotto, but this worked like a charm! My family loved it. My daughter asked me to put in more peas next time ;). I served this dish with a fresh garden salad with a light oil and vinegar dressing. Yummy! It's a winner! Thanks for sharing your recipe!

Quinoa Pilaf With Mushrooms

Reviewed: Nov. 7, 2013
My daughter hasn't warmed up to quinoa until this dish. The thing that made this a winner is sauteing the quinoa in olive oil to brown. It really brings out flavor! I didn't have a shallot or mushrooms, so I used 1/4 of a white onion, and a 1/2 cup of broccoli, chopped. I think it would be wonderful with the shallots and mushrooms, but I didn't have time to go to the store. I also used chicken broth (all I had on hand) with great results. I didn't find it too salty, but used good, low salt broth. The only thing I added was some shredded parmesan cheese to the hot quinoa once I dished it onto plates. Just a sprinkle. The family really liked this dish. It will make it into our regular rotation for sure!

Rosemary Ranch Chicken Kabobs

Reviewed: Nov. 7, 2013
I made this recipe for dinner tonight. My 9 year old daughter was crazy about it!!! She isn't always easy to please, but I wouldn't call her a classic picky eater. She likes flavor and I suspect she is on her way to being a great cook. There wasn't a bit left on her plate. We are in a rental house during our remodel, and don't have a grill. I cut the breasts into 3 strips each, skewered them, baked for 10 minutes in the marinade, tossed the marinade, put foil on a cookie sheet, then under the broiler for 10. Perfect! I did marinade longer than 30 minutes (more like 2 hours). I would definitely increase the marinade time. Nice, simple week night main dish.
