Pumpkin Gingerbread

Reviewed: Nov. 23, 2008
Good, moist. I enjoyed it, and it was a good change from plain pumpkin bread.

Shrimp Lemon Pepper Linguini

This was quite good. I did cut back a bit on the pepper just to please the taste of my 3 kids. It was easy and light and I will certainly make it again.

Holiday Shortbread Cookies

good cookies. I halved the recipe and it still made a 9x13 panful. I am going to make them again and drizzle or dip them in chocolate.

Holiday Chicken Salad

Reviewed: Dec. 6, 2007
Honestly, this is an amazing recipe. I used red bell pepper for more color and I used a rotisserie chicken from Costco. I served it on crossiants (my kids ate it by itself and then ate the crossiant separately). My mother-in-law ate the leftovers for lunch with soda crackers. Certainly worth the time to make!

Mini Sour Cream Biscuits

Reviewed: Nov. 6, 2007
This were so incredibley fast and had a nice taste to them. I will make them again. I am sure that cheese could be added easily to change these up, but they were nice as is: good flavor and texture. Oh, I found that they needed only 8 or 9 minutes to bake.

Black Cat Cookies

Reviewed: Oct. 25, 2007
I am giving thesea five because they are very cute, quite easy, and pretty darn good. I did make some changes though, because I realized while making the recipe that I was short on some ingredients. I used 1/2 c cocoa powder and 1/2 c melted 60% cocoa chips (I ran out of the cocoa powder). I added the melted chocolate to the sugar/egg/butter mix. I chilled the batter for about 10 minutes before shaping into balls. Finally, I used chocolate chips for eyes and nose, as my kids don't like candy corn or red hots. They were so easy and cute and quite easy to alter.

Peanut Butter Bars I

Reviewed: Aug. 14, 2007
Good, fast, kids loved it. It is really sweet, but made a great dessert for a picnic in the park. I used the food processer on the graham crackers, and though the texture is a bit 'grainy'...there isn't really any way around that...graham crackers are grainy. It's good...try it!

Amy's Barbecue Chicken Salad

Reviewed: Aug. 14, 2007
Every member of my family loved this (8, 5 and 4 yr old and my hubby). It was easy, light, fast and really good...and filling. I served it with homemade corn bread. The only changes I made were to eliminate cilantro and add chopped red bell pepper. I also used Foster Farms grilled chicken pieces from the deli section (I didn't have any chicken defrosted.) I didn't use the dressing to toss the salad, only because I knew my kids would prefer a different dressing, so I served them, then tossed the salad for the adults. Really good!

Best Brownies

Reviewed: Jun. 29, 2007
These were very dense and yummy. I didn't make the frosting, only because I didn't feel like it, and I am glad I didn't. I added chocolate chips to the batter and the brownies were rich and delicious without the frosting. Obviously, I will make these again.

Cottage Cheese Chicken Enchiladas

Reviewed: Apr. 29, 2007
We really like these. The only change tha I make is to use nonfat plain yogurt in place of the sour cream. I imagine it gives it a bit more zing, but since I haven't made it with sour cream I am not sure. We love the flavor, texture and ease of this meal. Our 3 kids love it too.

Chocolate Buttermilk Brownies

Reviewed: Mar. 25, 2007
These were good. More cake like than dense brownie. I did not make the frosting, as I couldn't get past the amount of butter and powdered sugar involved, but the brownies have a good, but different flavor regardless. I would make these again. Oh, I added chocolate chips, which sort of gave it a layer of chips on the bottom, as the batter is thinner than regular brownies, so the chips sank.

BBQ Pork for Sandwiches

Reviewed: Feb. 7, 2007
This was very good! We don't eat beef, so I used chicken broth and per other reviewers' suggestion, I used the Sweet Baby Ray BBQ sauce. We ate it with Kaiser rolls, and it truly was delicious, aside from the fact that I started it in the morning and it was done in the evening. Couldn't be easier!!

Honey Crunch Pecan Pie

Reviewed: Nov. 28, 2006
The absolute BEST pecan pie. Make extra honeyed pecans for the top, cause they are wonderful to just munch on. Also, I like the top pecans to be roughly chopped, not just cut in half like the recipe calls for. The halved pecans make it too hard to cut into and too hard to bite into.

Broiled Tilapia Parmesan

This is quite good and the kids really like it. My only 'complaint' (if you want to call it that) is that it covers up the flavor of the fish too much. But it does have a good different flavor.

Downeast Maine Pumpkin Bread

We loved this bread. I halved the cloves, as I don't care for pumpkin bread with a real strong clove taste. It was truly delicious!!

Artichoke Chicken

Not so good. Even after scraping the topping off, not a single one of my three kids would even touch the chicken. Finally, I had to relent: this just was not a good meal. Sorry!

Cheddar Bay Biscuits

Reviewed: Apr. 26, 2006
The topping on these biscuits really adds a unique and delicious flavor. I have tried tons of cheddar biscuit recipes and have found that they just don't pack a cheesey punch, regardless of how much or how sharp the cheese. And these really are no different, so the addition of the topping really makes these stand out. Try 'em!!

Fabulous Fruit Salad II

This was really good. Why hadn't I thought of it myself?? It was fresh and delicious. I added granola instead of walnuts, as another reviewer suggested. It was more kid friendly that way. Yummy!!
