I've made these a few times and they are always good. Use Greek yogurt if you want a thicker sauce. The canned pepper in adobo sauce vary in intensity so you need to add per your taste. I also add 1/4 tsp cumin, 1/4 tsp chili powder, 1/2 tsp Old Bay and some honey if it needs it. (From another recipe)

Mom's Zucchini Bread

Followed the other reviews. Used 1/2 cup of oil and 1/2 cup applesauce, 3 cups zucchini, and substituted half the white sugar with brown. Easy and Excellent!

Dijon Crusted Halibut

Very good even though I messed up reading the directions. I only put the bread crumbs and Parmesan cheese in the topping along with leaving out the margarine. I baked for one hour, the fish was done but the top wasn't brown so I put it under the broiler for 2 min. My husband and son loved it.

No Fail Pound Cake

This is not your dense pound cake but a good quick alternative. I made it for strawberry shortcake as my husband isn't a big fan of "shortcake". It was tasty and moist enough to eat alone. I'd make it again.

Pork Chops with Onions and Apples

I love this recipe because of the apple and onions. I never thought that would be a good combination but my husband and love them. As far as the chops, I usually rub sage and cumin on them.

Antipasto Pasta Salad

This pasta salad is fantastic! Every time I have made this it is a big hit. Make sure that you let it soak up the Italian dressing so it is not gritty.

Cinnamon Swirl Bundt Coffee Cake

This has been a big hit, very good but not too sweet. The first time I tried this recipe the sour cream and butter were quite lumpy so I started over. I now cream the sugar and butter before adding the eggs and sour cream. I also substituted pecans instead of walnuts. Do grease your pan well!

Artichoke and Black Olive Baked Chicken

This recipe is very easy to make and tastes great. I would recommend rinsing the olives prior to adding them. I made the mistake of prepping the dish and having it sit in the refrigerator for and hour prior to baking which turned the chicken a grey color.

Slow Cooker Adobo Chicken

Very tasty and easy to make. I used balsamic vinegar since it was not clear as to what type to use. Also added about a cup of water so that the chicken was covered with liquid.
