Lemon Meltaways

Such a great cookie. My mom used to make these years ago and I was so happy to find the recipe. I had zero problems with my cookies crumbling apart. I rolled my logs thinner and cut the slices a little bigger. After exactly 11 minutes on parchment paper in the oven they were perfect. Will definitely be making these for Christmas. Just make sure cookies cool completely before frosting!

Cornbread Sausage Casserole

I combined this recipe and another. I package Corn Bread Mix. 1 can Corn(drained). 1 can Cream Corn. Mix together. Combine half of mixture in baking dish. Sprinkle sausage and onion mixture and a layer of Cheddar Cheese.Then I put the rest of corn mixture on top. My husband LOVED this. He even requested it for breakfast this weekend. Will definitely try again and make spicy and with some cream cheese. Yum!

These turned out great. I made the recipe exact except I refrigerated them for 3 hours. By the time I took them out they were rock hard! Impossible to roll. But after I let them sit out for 2hrs or so they softend up perfect for me to roll them into tablespoon sized balls. Rolled in powdered sugar and sprinkles. Will definitely make again for Christmas. Only problem I had with these is that they are incredibly sweet. I couldn't even finish one without being extremely thirsty. Next time I will use this recipe to make fudge instead. Rolling into bite size balls doesn't seem to work since the richness is overwhelming. Very easy recipe tho!
