Pasta e Fagioli II

excellent cold weather soup. I followed the recipe almost exactly (at least, as close as I come). I used diluted pasta sauce because I didn't have tomato juice, and cut down a little on the basil. I also used balsamic vinegar. This was the first time I used proscuitto--I think it added to the depth of flavor.

Loved it! I made it for dinner the first night the weather turned cold, and it really warms you from the inside out. My husband and I are wimps--I put in about 2/3 the amount of red pepper and may try it with half next time. I seldom can get fresh lemon grass at my grocer, but the produce section carries a lemon grass paste in a plastic squeeze tube (Garden Gourmet brand, I think) that worked quite well. Lovely, quick warming soup--will make it lots this winter.

Peanut Butter Vegetable Chicken Soup

Very vegetable-y and warming on a cool night. I snuck a ladle before I added the peanut butter, and loved it. Good and different, but I'm still not sure about the peanut butter.

Roasted Vegetables

Absolutely the best food on the table this Thanksgiving (and it was all delicious!) Delicious and healthy, too! I think the fresh herbs made it special--and I loved the fragrance on my hands and in the kitchen. Easy to fix a double recipe, reheated well--the hardest part of the preparation was getting the peel off the squash.

Fast Chicken Soup Base

Didn't actually make this one, but it's the way I've made emergency homemade chicken soup for years when someone in the family is under the weather and needs soup in a hurry. I use fresh parsley and no thyme, but the method is the same. The lovely simmering aroma will make anyone who is sick feel better even before they eat.

Slow Cooker Chicken Stroganoff

I'd probably give this one three stars, the 4 star rating is from my husband. I added cubed potatoes, sliced onions and red peppers and used low fat soup and cream cheese. also added white wine and chicken broth and served it as a chowder-type soup. Very easy, hands-off cooking and a wonderful fragrance to come home to.

White Chocolate Fruit Tart

Three stars because it inspires me to do it differently. Crust is too thick and bland, filling is cloyingly sweet. A thinner crust, maybe with some lemon or lime zest would be nice, and a more tart filling would be preferable. Maybe lemon curd lightened with whipped cream? It looked beautiful, though.
