Asian Salmon Cakes with Creamy Miso and Sake Sauce

I enjoyed this recipe (and it was a hit with my 1 yr old, too, and "okay" with my 7 year old and 36 year old). I made quite a few modifications, because I made it impromptu. For the sauce, I did not have miso or sake. I added rice wine vinegar instead of the sake (not quite 1/4 cup) and extra lime. I think that the cakes are good on their own--better without the sauce--or maybe just a little lime/butter sauce would be good. I amended the cakes as well, since the proportion seemed off. I used a whole can of salmon (14 oz), and less bread crumbs--maybe 1 cup max? I had to use 2 eggs to get them moist enough. I added a bit of lime juice as well. My 7 year old complained that there were too many onions, so I'd chop them more finely next time.

Alaska Canned Salmon Carbonara

My husband and I thought this was great! I used some leftover salmon I had baked instead of the canned. I also cooked the bacon in the microwave, and didn't use the bacon grease. I didn't think it was at all watery, but I did cook it down, probably more than 4 minutes. I might have used a little more red pepper, too, which gave it a nice kick. When I added the cream, I added enough 1% milk to give it the consistency I wanted. It's a great use of leftover meat--we thought shrimp or chicken or sausage would be good, too.

Amish Meatloaf

Strawberry Shortcake

This is good!! The biscuit part is very flavorful and easy. A few changes I made--I liked sweetened whipped cream, so I did add sugar. I used frozen, sweetened strawberries. Also, for presentation, I used heart shaped cookie cutters after I baked and split the cake for a great presentation.

Spicy Chile Casserole

This was okay, not great, in my opinion. Yes, it was a little mushy as others have commented and it lacked a great flavor. I did like the idea that the sauce was more natural than using a can of cream soup as some recipes do. I doubt I would make this again as is, but might use some of the components to try my own recipe.

Bar Cookies from Cake Mix

I also added 2 more T water. I omitted the nuts, and used 1 cup peanut butter chips and 1 cup semisweet chips. These are great! The texture was good (soft and cakelike) and there's a crispy top. I'll make this again.
