About this Cook
My favorite family cooking traditions
My son is very much a traditionalist. He insist on the same thing for Christmas breakfast every year. Even though it is nothing fancy, I love cooking this simple meal of scrambled eggs, grits, bacon, and cinnamon rolls for our family. I love it that he won't let me change a thing!
My cooking triumphs
I seem to have my best success with dessert recipes and I love making them, however, my husband and I are both pretty health conscious so I end up only making them for special family gatherings.
My cooking tragedies
Every once in a while I try something that is truly awful. It will usually be a meat dish. I am not very good at improvising either. One time I tried a recipe off this site that everyone else seemed to like. I must have done something wrong because after a few bites by family decided to go out for Mexican!

Goat Cheese Arugula Pizza - No Red Sauce!
This is very easy, but very good. I love goat cheese, but for the people that don't love it quite so much, I have made this with cream cheese with just a few sprinkles of goat cheese. They seem to really like it without realizing what they are eating. I also buy extra thin pizza crust. Even men love this one.

Double Tomato Bruschetta
This was a delicious but best of all extremely easy recipe! I made these for a Christmas gathering of my Book Club and they were a definite hit. I did make a few changes by way of what I had in my pantry, suggestions of other reviewers, and one accidental mistake. I used diced tomatoes, dried basil, instead of adding olive oil to the mixture I used the extra oil from the sundried tomatoes for flavor. I let this mixture sit in the fridge overnight as someone had suggested. I did use fresh mozzerella which I think is important. I also brushed the bread slices with olive oil before putting on the cheese. Once I had everything layered, I cooked it all together about 4 min. and it was perfectly done. I will be making these often. Thank you!!!
