Raspberry and Almond Shortbread Thumbprints

This cookie reminds me of marzipan! I was told by my friends and family that it was very yummy, and I definitely enjoyed them, too. I managed to make exactly 36 cookies (an amazing feat for someone who always gets the servings messed up) and filled 1/3 of the cookies with blackberry jam, 1/3 with strawberry, and 1/ with grape. I could have done without the icing because I could taste the powdered sugar, but everyone else said it was delicious. I might reserve a small amount of icing next time to thin out with more milk. Great overall!

Moroccan Lentil Soup

This soup has an excellent Indian flavor. Some friends walked into the house just after I started to boil the soup and they commented on the wonderful aroma that filled the house! I used brown lentils instead of red, I used red kidney beans instead of cannellini (which is white kidney beans), and I diced my own carrots, tomatoes, and celery. Fresh is always better than canned! I also used bagged beans instead of canned because of the higher nutritional value bagged beans have, so I had to let the soup cook longer (I made it around 8 AM and it was ready by 9 PM. I didn't have any cardamom so I used 3/4 teaspoon of ground cinnamon and 3/4 teaspoon of ground cloves. Garam masala is a spice combo of cinnamon, cloves, and black pepper, so you don't really need more garam masala... A great taste!

Cherry Clafouti

Excellent recipe. A few quick words: I used 1 cup egg substitute, a LITTLE less than 1 cup but more than 3/4 cup of soymilk. I've never used kirsch in my clafouti, so I just left it out. The dessert was still delicious and sweet and tastes just like a clafouti should. Also, I baked for only 35 minutes - it starts to brown quickly. Great overall! Delicious taste.

J.P.'s Big Daddy Biscuits

Just made these biscuits this morning for Thanksgiving! Delicious! I didn't have any shortening, so I substituted butter. It came out nearly perfectly, but was just a LITTLE crispy. Made 11 regular sized biscuits. My advice: 1) Don't overbake. Even if they appear too soft, take out after recommended time. 2) I only used 2.5 teaspoons baking soda, heeding the advice of other reviewers 3) I used 3/4 cup fat-free milk. 1 cup is just too much liquid. The dough was still a BIT gooey with 3/4 cup, but the finished product is awesome. 4) I added an additional 1 tablespoon of sugar. I can't resist a little extra sugar, plus you can't really taste the sugar in the end product. I think just 1 tablespoon may have allowed the baking soda flavor to take over. The recipe is great overall, though. Everyone loved them at the Thanksgiving get-together.
