Southern Living Magazine's Chicken-Fried Steak

Being from the mid west, Chicken Fried steak isn't one of my favorite foods in the world, but I do like trying other recipes. This one was pretty good, common sense tells you not to use so much oil, fried this up in my cast iron skillet and came out just fine. I did however add a bit of garlic powder to the gravy as it was a little bland. other then that, pretty dang good.

Banana Banana Bread

This is the ONLY banana bread recipe I will ever use again. The second time I made this, I followed the recipe, and then added 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1 tbls vanilla extract, 1/2 cup walnuts, 1 cup of raisins. Excellent all around. If you don't like raisins or walnuts in your bread, at least use the extra cinnamon, nutmeg and vanilla. On its own the bread is pretty good and very moist, but it does lack just that little extra something (at least in my opinion). So play around a bit with additions (Isn't that what all us good cooks do anyway?), but overall, its an excellent recipe, I'll always use the base ingredients and change it only based on my mood and items on hand. You should too. I base my opinions on how well the recipie tastes on its own first, then how I would change it to my owns tastes. No need to whine about something like a bread or pastry that doesn't include your prefrence in add ins. Judge it how its tastes as prepared. This on its own without additions, is excellent.

French Toast I

Very good recipe. I think the problem people have with french toast is its usually too runny/goopy or flat. This is all the egg/milk ratio. At least thats usually where I goof. This recipe worked well for me. Usually I do French Toast using texas toast size bread, but when I tried this recipie I used what I had on hand, regular loaf of supermarket Wonder™ bread. Was not runny or goopy at all, browned well with no smooshieness. .....LOL....I just realized how goofy this review sounds...but how else would you describe french toast gone wrong....LOL....... 5 STARS, WORKS GREAT !!!! TASTE EXCELLENT !!!!

Cranberry Salad III

Very good, everyone loved it. Heres a neat little trick. Halve the recipe and put the cream cheese layer on the bottom of a ready made graham cracker crust, then set for 10 minutes in the freezer and then add the cranberry mixture layer and chill in fridge till firm. Makes an AWESOME PIE !!!!

Veggie Ranch Pizza

Excellent Pizza, and the strange thing is, I normally HATE ranch. So I only used about 1/2 cup for the sauce. Baked it with a ready made crust, and also I brushed on some olive oil before adding toppings. Pizza was fantastic, and I never thought I would ever say this but could have used more ranch..Will add more next time. For a veggie Pizza, this one is a winner. And normally I hate veggie pizza too. This one however tasted so much different then others I have had. 5 STARS ALL THE WAY.

Oatmeal Peanut Butter Cookies

Followed recipe except used 1 and 1/2 cups of old fashioned oats and 1 tsp of vanilla. As far as peanut butter cookies go, this is the best I have tasted. Usually when I have PB cookies they taste kind of crummy and they fall apart, these held there shape real well. I just rolled into balls and smashed just a bit with a fork before baking. I also added 1/2 cup of raisins. I think next time though, I may add a tsp or so of either cinnamon or nutmeg to kick it up a notch. Seemed to me like it was missing a taste, I think it was probably nutmeg. But other then that EXCELLENT cookies.

Slow Cooker Venison Roast

Tried this the other day, an of course ommited any salt. My kids just ate it up quick, they had no idea it was deer meat. My wife could tell the ever so slight difference between a deer and beef but thought it tasted pretty much the same except more tender. EXCELLENT RECIPE.

Red Enchilada Sauce

First let me start by saying I am 1/2 Hispanic 1/2 White. This does NOT taste authentic as far as enchilada sauce goes, it DOES however taste really really good. Usually when I try any new recipe here I'll tweek it a bit to my own taste. This is so far the only recipie I have ever come across that I did NOT want to change anything. It is great !!EDIT: I have used 1 can of tomato juice and ommited paste/water. If you do it this way, I'd suggest a long simmer.Also my choice is CALVIN AND CLEOS™ salsa. Tried Pace™/Old El Paso™, even my own home made, but commercially, theres tasted best in at least this recipe. Be warned, the awsome smell it creates may drive you crazy for a while....dang it I'm hungry now ...Gonna make some again this weekend.............. Quick recipe. Make enchilada filling from 2lb hamburger, 1 medium onion, 1lb velveeta cubed, or shredded, and about 1/2 cup of this sauce, roll your filling up,Pour about a cup on the bottom of a 9x13 pan, Place rolled enchiladas in cake pan, pour the rest of this sauce over it all, and top with shredded cheddar, bake for 30 min @ 350. YUMMMM.

Leftover Turkey Casserole

An easy variation to this recipe that really gets rid of leftovers is mix your leftover turkey with the green bean casserole and extra stuffing, pour in about a cup or so of the leftover gravy and mix, spread out in a 9x13 pan and sprinkle with CHEESE (I don't use sour cream)!!!!! bake accordingly !! We actually enjoy the casserole the next day more then the typical turkey day meal.

Broccoli Rice Casserole

Excellent casserole, I changed it the last couple times I have made this by adding a jar of Ragu™ Cheddar cheese sauce instead of cubed cheese. YUMMMMM !!!!! But the original recipe is also excellent, I just prefer the cheddar sauce.
