Chocolate Chip Banana Muffins

MY MUFFINS LOOK JUST LIKE THE PICTURE!!! I may start letting bananas go overripe on purpose just to enjoy more of these bad boys. The only change I made was to use vegetable oil in place of sesame oil. My neighbor's small boys were here when the first dozen came out of the oven and I immediately got rave reviews! I was worried while putting the batter in the muffin papers because the batter looked so oily but the muffins are so incredibly moist, and were perfectly cooked at 20 minutes. I doubled the recipe exactly but got two and a half dozen muffins, filling the muffin papers 2/3 full... BONUS!

Cola Pot Roast I

I used the exact recipe (sans browning) in my slow cooker on high for 6 hours, and served it with rosemary gravy made from some of the savory juices it produced, along with roasted/sliced/herbed potatoes... my husband of 5 years nearly proposed again. Next time I plan to substitute the spaghetti packet with herbs I already have, and use fresh tomatoes and tomato paste, and add sliced carrots. After the majority of the roast is gone, the vegetable beef soup left behind on day 3 will be wonderful.

Pumpkin Sheet Cake

I will never make THIS cake again... too much oil, not enough flour, not enough flavor, had to bake 10 minutes longer than called for and still came out a dense, flavorless disappointment. I can' t comment on the icing because I used a Betty Crocker cream cheese icing, and that was the only tasty part of this cake.

Slow Cooker Chicken and Dumplings

Like others, I made a few changes (what cook doesn't, really?) and appreciate this recipe as a great launch pad. I added 1tsp each salt, pepper, and rosemary which I blended with 2 Cups milk and 2Tbs organic chicken bouillon (a gel), rather than cream of chicken soup (not a fan). In addition to 1 chopped onion, I added chopped celery and carrots. 30 mins before serving, I removed 1 Cup of the broth to blend with 4Tbs flour, and gently stirred it back in to thicken the soup. I can't stand canned biscuits, but still wanted the wonderful texture of chicken and dumplings, so I served this soup in a bed of savory mashed potatoes, with a portion of chicken and a buttermilk biscuit... Heavenly!

Best Chocolate Chip Cookies

Using this recipe as a base, I took the advice of a few other commentors and made the following changes/additions: 1-1/2 cups cake flour, 1-1/2 cups ground oat flour, 1-1/2 cups brown sugar, 1/2 cup white sugar, 1 teaspoon cream of tarter, 1 cup butter flavored Crisco, 3/4 teaspoon salt, baked on parchment paper at 335f for 20 minutes, the walnut sized balls of cookie dough were chilled in the fridge until put in the oven, so cookies were uniform in shape, every cookie had perfectly crisp outsides and soft chewy centers. This will forever be my chocolate chip cookie recipe.
