Best Cream Of Broccoli Soup

Really enjoyed this soup and it turned out great. I did a few things differently. I used 1 head of cauliflower and 1/2 a bag of fresh spinach in addition to the 1 head of broccoli. I put the veggies in my food processor and lightly pulsed. I also used 5 cups of broth and simmered for 20 minutes. I used a potato masher to get some of the bigger pieces that the food processor didn't chop. For the cream sauce I used 1 1/2 cups 1% milk and 1/2 cup of light sour cream. Final result was awesome. I added minced garlic too with the onions and celery. Definitely a keeper!

Chicken Enchiladas II

This was delicious. I was a little leery about the whole soup thing but it turned out great. I used a couple of suggestions from previous reviews: Cream of chicken soup, taco seasoning in with the chicken and doubled the sauce recipe. They turned out great and my guests couldn't get over how good they were. I couldn't find corn tortilla's in the size I wanted so I went with flour and they still turned out great! This one is a keeper.

Spaghetti Squash I

This was my first time making spaghetti squash and it turned out awesome. It was so much fun running the fork down to get the strings out. This is such a great alternative for me instead of pasta. I'm on a new eating plan and I just love it. Next time I am going to add chicken to the recipe to give it a little more portein. Instead of plain feta cheese I added some mediterain feta cheese and it turned out great.

No Bake Peanut Butter Pie

Wow! This is such a great and easy recipe. I purchased a crust only to tip it out and it broke all over. Much to my dismay and horror as it was 9;00 at night. I quickly made a homemade graham cracker crust (first one). It turned out great. I followed the other suggestion and put some hot fudge in the bottom before putting in the filling. I placed in the freezer overnight and took out in the morning to bring into work. It was quickly consumed. This recipe is certainly a keeper!

Stir Fried Kale

This recipe was great. This was my first time eating and cooking kale. A friend of mine brought some over the other night. I was pleasantly surprised with the taste and texture of this recipe. I followed it exactly. The only thing I would do differently next time is to steam the kale first in some veggie broth. The bread crumb mixture didn't want to stick to the kale too much so I added a little more olive oil. Great way to get in your vitamins!

Mexican Cream Cheese Rollups

I doubled this recipe as I was making this for a potluck at work. I did change a couple of things with this recipe. I used light cream cheese and light mayo and I also added a little light sour cream. To this mixture I added a packet of mild taco seasoning for some kick. I omitted the green olives and just used the green onions and black olives. I rolled these up in spinach tortillas for added effect and it was a hit. I served it with mild salsa. I can't wait to make this again.

Cheesy Enchiladas

Great recipe. I used suggestions from fellow cooks and added chicken and enchilada sauce. I sprinkled the chicken with some taco seasoning prior to putting on the grill. I also used some taco seasoning in the cream cheese as well. I added refried beans to the mix and spread that on first. All in all it turned out great and my friends rave about it!!

Ultimate Twice Baked Potatoes

Great recipe and very easy. I changed a couple of things and added a 1/2 cup of tatter topper instead of using a whole cup of sour cream. I also decreased the milk by just a bit. I didn't use any bacon because I didn't have any on hand and I added garlic salt to the mixture. Overall, it turned out great considering this is the first time I have ever made these!

Spinach Quiche

What a great recipe. I followed it pretty close and used some of the suggestions left by other cooks. I added brocolli along with the spinach. I used one 10oz box of frozen spinach and about 1 1/2 cups of brocolli. I used swiss cheese instead of the feta and mixed it in with the spinach/brocolli mix before placing in the pie shell. I made two, one for me and one for my mother and she even ate a piece for breakfeast. This recipe is so easy and you can use your creativity to make it personalized.
