Black Bean and Couscous Salad

I added a can of Rotel (tomatoes w/ diced peppers) for more zip. We also like to serve it with salsa on top and tortilla chips on the side.

Slow Cooker Lasagna

My husband is a lasagna fan and really liked this slow cooker version. I'd even go as far as to say he put it up there with his favorite restaurant's version and that's saying a lot!

Savory Tater Tot Casserole

Cranberry Parfait Pie

If you love tart (and I do!) this ones for you. When I cooked the gelatin on the stove, it never did thicken, but the pie turned out great! I made it for Thanksgiving and got rave reviews.
