Gluten Free Banana Bread

Great GF recipe! Like others, I did make minor adjustments: I used Earth Balance Coconut Spread as a replacement for the butter to make it dairy-free, I also added 1/2 teaspoon of xantham gum, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and used 1/2 cup of unsweetened applesauce in place of the sugar. The texture is wonderful - not crumbly or rubbery as some gluten-free products tend to be. The muffins rose nicely and were moist and very delicious! Thanks so much for sharing this recipe!

Pizza Casserole

LOVE! Thank you so much for such a great, easy recipe. My picky 6-year old absolutely loved this dish. I modified it for a gluten-free/dairy-free diet by using Tinkyada spiral shells (I've tried other GF brands and Tinkyada is by far the best), omitting the 4 T of milk and using a dairy-free cheese, such as the Daiya mozzarella shreds- came out fantastic! I read where a previous reviewer expressed their doubts whether a 14 oz. jar of pizza sauce would be enough or not- I thought the same thing but sure enough, the 14 oz. is just the right amount! Not dry or swamped with too much sauce. I also used Italian ground sausage instead of beef. The best thing about this recipe is that you can customize it the way you want, much like ordering a regular pizza. Thanks again for sharing!

Dark Chocolate Cake II

AWESOME CAKE!! This is truly the BEST chocolate cake recipe EVER. Seriously. I followed one reviewer's advice and substituted the 1 cup of milk with 1 cup of whole fat buttermilk - WOW. Amazing how it turned out. I baked it in a bundt pan for about 30 minutes. I had no problems with the cake falling or any dryness at all. This was extremely rich & moist and very easy to make. Thank you SO MUCH for sharing this incredible recipe!

Creamy Chocolate Frosting

This is by far, one of the best chocolate frosting recipes I've ever tried. Very rich and creamy, not overly sweet and has a great chocolate flavor to it. I followed the recipe exactly and had plenty to frost a bundt cake, with quite a bit left over. Thank you so much for sharing!

Best Brownies

AWESOME!! These were super easy to make and came out terrific. I will never again buy the box-brand. Just as the recipe and other reviewers have stated, be sure not to over-bake. I baked mine at around 22 minutes and they came out absolutely perfect, thank you so much for sharing this recipe. I'll definitely will be making these again.

Apple-Raisin French Toast Casserole

OMG, this is WONDERFUL! Sooo easy to make. I used 3 Granny Smith apples and the regular amount of butter. The only thing I did a little differently, was melt the butter, brown sugar and cinnamon together into a glaze, so that it would be easier to mix onto the apple slices & raisins. I also followed some of the other reviewers' advice and soaked the bread cubes (I just used regular French loaf bread) in the egg mixture overnight, separate from the apple/raisin mix in the baking pan. Cooked it for about 40 minutes and 10-12 minutes uncovered. I took this to a work function for Boss's Day, it was GONE in no time! Everyone was asking me for the recipe and it got rave reviews. Great recipe, I'll definitely be making this again. Thanks so much for sharing!

Double Layer Pumpkin Cheesecake

This is by far one of the best and easiest cheesecake recipes I've tried. I've made this for a couple of different work functions and everyone loved it! Even now, I already have people requesting it for this upcoming autumn. The only thing I changed slightly, is I added a bit more cheesecake to the bottom layer - fantastic recipe!

Spanish Rice Bake

Great recipe and very easy to make. I didn't have any chile sauce on hand, but used a little under a 1/4 cup of Texas Pete, and it still turned out great. The cilantro garnish really does make the dish. Will definitely make again, thanks for sharing!

Kentucky Butter Cake

Wow, this was an incredible cake for as simple as it may sound. Super easy to make and like others have said, one of the tricks is to make sure you cool the cake completely before removing it from the bundt pan (also, a little Baker's Joy helps do the trick too!). I followed some suggestions and added about a 1/2 cup more buttermilk to the batter to help thin it out, used a wooden chopstick for the holes and poured most of the butter sauce into the cake. I took it to a work function and everybody LOVED it! Thanks so much for sharing this terrific recipe!

German Chocolate Pie

This is one of the easiest and delicious desserts to make. I've made this twice already, and have had people asking for more or for the recipe. Great spin off of the classic German Chocolate Cake. The chocolate pudding comes out wonderful. By far the best no-bake pie recipe I've tried. Thanks so much for sharing!

Sweet Potato Pineapple Casserole

Wonderful! Just a little tweaking and it came out great! I found that a 9x13 pan was a little too big, maybe a 9x9 would do better? Also, I added a full cup of pineapple along with some cinnamon. Not too sweet, not too tangy. Thanks for sharing this recipe!

Glazed Meatloaf I

Broccoli, Rice, Cheese, and Chicken Casserole

One of the best cheese/broccoli casserole recipes I've tried! There's a little more prep work involved than your standard recipe. I also substituted the canned chicken for fresh cubed chicken breast, just brown it in a skillet until the pieces are cooked through, with a little paprika for color. Instead of boiling water to cook the rice in, I used canned chicken broth, which really put a lot of flavor in the rice. This is a great dish, my one-year old and I loved it! Thanks for sharing!

All Day Macaroni and Cheese

This is a good, standard mac & cheese recipe, also a good for "tweaking" the ingredients however you'd like. The only small drawback was that it came out a little too dry, which could probably be alieviated by a little more milk.
