Cabbage Roll Casserole

I halved the meat, precooked the rice, add minced garlic to meat mixture, sprinkle with salt & pepper, used tomato juice (like my Mom used in regular cabbage rolls), steamed the cabbage leaves(devein center stem) for 1 or 2 minutes, and lastly added 1 can of-- sauerkraut (like my Mom did), rinsed and drained. I think the sauerkraut really makes this taste like cabbage rolls I had for supper growing up in NJ.

Spiced Yogurt Pound Cake

It's been 4 years since I submitted this recipe--my how time goes by--well I just wanted to say that originally I did use a bundt pan but it would take so very long to bake so I thought that it would be better to suggest using a 9 x 13 pan. The five star rating is for all the wonderful people and their very kind and generous reviews. Also I sometimes drizzle a sugar glaze over the cake or use vanilla or cream cheese frosting too. My family still insists that I make this cake for the holidays. Enjoy! ALSO, please make sure you use a full 1 cup (8 ounces) of the yogurt as the yogurt they sell today is only 6 oz and less yogurt will cause a dryer cake.

Bacon Roll Ups I

These are delicious! I use very soft white bread (the kind that comes in the package with balloons) and after cutting off the crusts I use a rolling pin to flatten the soft bread. I then cut the bread into thirds--long rectangles, spread the cream cheese mixture on the bread, roll them up and wrap with the bacon as said in the above recipe. Again, these are so good!!

Baked Stuffed Clams

I really enjoyed this. Instead of using clam shells I put the mixture into a shallow casserole dish and baked it. I serve it in the casserole dish with small buttery crackers to scoop up the mixture. Also took the advice and didn't overcook the clams. Thank you!

Basic Hard-Cooked Eggs

I've been cooking eggs the wrong way for a very long time! I'm so glad I came across these instructions. The eggs turned out beautifully and no green ring. I let the large eggs sit in the hot water for 16 minutes (I was a little nervous) and they were thoroughly cooked and wonderfully tender!

Beef Noodle Shepherd's Pie

This is a quick meal to make and it was very tasty. Well, it was either noodles or the mashed potatoe because that's just too much starch for my family so I went with intant potatoes. Also used 1 1/2 lbs. of ground beef. Added green beans to the mix and used the instant onion soup mix but added some low sodium beef broth as it was turning a little dry. Also, I used a large cast iron skillet to simmer everything and after topping with the potatoes I just popped the iron skillet into the oven to bake. Next time I will add some shredded cheddar to top the potatoes.

Spinach, Sausage and Cheese Bake

This was very good. We don't care for sausage so I substituted ground beef and used ricotta cheese instead of the cottage cheese. Very tasty!
