Absolutely delicious! I tweaked the recipe quite a bit, as I was making it for my toddler and it needed to be healthier. I doubled the recipe and used 5 c ww flour, and 2 c white, halved the sugar and used all brown sugar (and it is still lovely and sweet! Can't imagine how sweet it would have been had I not halved it), used applesauce instead of oil, added 3/4 c wheat germ, 1 c flax seed, 1 c walnuts, and 1/2 c dried cranberries. I made a cream cheese glaze for the adults, and it was a huge hit! I made 2 bundt cakes and one loaf pan from a double recipe, and will be making it again soon! Next time, I want to top it with toasted pumpkin seeds.
