Pressure Cooker Chicken with Duck Sauce

This review is for those using a pressure cooker for the first time. This was the first pressure cooker recipe that I used at it turned out great! The only catch is that you have to brown the meat first, but this is the case w/ many pressure cooker dishes. Consider wearing an oven mitten to protect your arm from the popping grease. Because I used chx breast and wings, I could have browned them quicker in a separate skillet. But, if you're just using the pieces from a whole chx according to the recipe, just use the pressure cooker. Hope this helps!

Cranberry Sauce

Great recipe for those that like the canned cranberry sauce! My husband loves (or thought he did) the canned stuff, but I still wanted to try to make it from scratch. I doubled the recipe and added an additional cup of white sugar and cup of orange juice. I don't recommend this step unless you have a sweet tooth. I took out about 2 cups of cranberries (once they were cooked) and the juice and pureed it. I then added it back to the rest of the dish. It turned out wonderful! My husband admits that he liked it a lot better than the canned stuff!

Gouda Spinach Quiche

This dish was delish! I did make some changes: I don't know what it means to trim and flute the edge, so I didn't. I did use Pillsbury deep dish pie crust, so maybe the trip and flute part wasn't needed. Idk. My husband thinks he doesn't like onions, so I pureed them first. I also added extra spinach, which meant that I wasn't able to add all of the cream/egg mixture. Since I didn't have any bacon on hand, I used smoked chicken sausage. My guess is that this dish would go well with any meat you have in your fridge. It turned out great!

Most Excellent Sandwich

Pat's Potato Salad

I just made this and took it too a bbq and everyone LOVED this recipe. I've finally found the potato salad recipe I've been looking for! I kept the skin on the potatoes and added boiled eggs and turkey bacon just before refrigerating. Turns out I used cilantro instead of parsley, but it was still the most talked about dish at the bbq.

Roasted Red Potato Salad

Despite the great reviews, I thought this recipe was okay. I guess I prefer potato salad with relish and mustard, but it was a nice break from the norm. Guests liked it.

Slow Cooker Sweet and Tangy Chicken

My husband and I didn't care for it at all. I prepared it strictly by the reciep and didn't like the flavor. I see that several others made certain changes recommended in the reviews. I probably should have done the same.

Cottage Cheese Chicken Enchiladas

Definitely one of my favorite recipes. Very easy to make, with room for your own twist. I add black olives and omit the green chilies and red enchilada sauces sometimes.

Chicken and Dumplings III

Easy and delicious! I use less meat and add peas and carrots. I made the mistake of using white meat (instead of dark meat as in the recipe) and I thought it was too tough. This is a great way to use the leftover chicken.

Asian Ground Beef and Pepper Saute

Easy and delicious! The best combination as far as I'm concerned. There is also a lot of room for play with the vegetables. I may add broccoli the next time I make this dish.
