Dad's Excellent Scallops

These were excellent and really easy to make. Forgot to soak the toothpicks so the ends burned to a crisp on the grill but other than that, everything was perfect. I served them with horseradish sauce kind of following the idea of shrimp lejon and it was surprisingly good!

That Good Salad

The first couple bites of this salad didn't wow me. But as I kept eating it and getting all the ingredients mixed together, it got better and better and I ended up loving it! Hubby loved it right away! I love the lightness and simplicity of the dressing.

French Onion Soup Gratinee

Excellent french onion soup! DH and I both loved it. However I may change up a few things next time to see if I like it even better. Use half beef broth, half chicken broth and only 1/4 c. of wine. I think I was looking for a little more beef flavor and a little less wine flavor. It's still excellent as is though.

Thai Pork with Peanut Sauce

Excellent! Did change up a few things. I added a little bit of sesame oil to the veg oil when frying the chops. I added a little bit of soy sauce to the peanut sauce as well. And left out the red pepper and cilantro. We will definitely be making this again!

Smoky Mountain Chipotle Chicken

Very good, however this made a TON of sauce. I would probably cut the sauce in half next time for that amount of chicken. I like the touch of the onions on this, it gave it a nice touch.

Nutty Chicken Fingers

These are great! I would have never thought to use nuts as a coating for chicken fingers. It gives a nice unique twist rather than having plain old bread crumb coated chicken. I served them with a horseradish mustard sauce from the fried chicken tenders recipe on this site. Delicious!

Three Cheese Garlic Scalloped Potatoes

The best scalloped potatoes I've ever had. I minced the garlic as I wasn't sure about getting a whole garlic slice in a bite! And I used some muenster cheese in place of the provolone because it's what I had on hand.

Haitian French Toast

This is really good. Used milk rather than heavy cream and left out the nutmeg. I don't think I would want this every time over "classic" french toast but it's a nice treat every now and then!

Tofu with Pork and Cashews

I made this for my 1 year old cause she likes tofu and we don't, so I left out anything spicy and the nuts of course. I added green beans and peas so she would get her veggies. When it was done, I tasted it and YUM! I might actually like tofu now! I would love to try this with everything exactly as the recipe reads.

Thai Grilled Chicken with Sweet Chile Dipping Sauce

The dipping sauce is phenomenal! And the chicken isn't bad either ;) I think next time I will make the chicken on skewers or make something like chicken fingers.

Apple and Spice Pork Roast

This was very tasty. The pork took almost 2 hours to cook through. I like how the sauce is thick enough to stay on top of the pork while it cooks. However, when serving the second half over the sliced pork I would probably thin it out with a little apple juice so it's more like a gravy/glaze. I coated carrots in a butter/brown sugar mixture and threw them in the pan with the roast.
