Steak, Onion, and Pepper Fajitas

The peppers and onions make this dish. I was a little leary of all that liquid smoke so I only added about 2 tsp. maybe a little more. As others did, I cut the oil way down. Didn't use the tequila b/c I didn't have any. Added fresh minced garlic to the marinade.

Texas Caviar with Avocado

Took this to a girls night at my sister in laws house. Everyone loved it. I substituted apple cider vinegar and EVOO in place of the italian dressing and black beans in place of black eyed peas. Very good, will definitely make again.

Bacon Cheddar Deviled Eggs

Definitely prefer the traditional deviled eggs. I think sometimes when you add bacon to something it takes on too much of the bacon flavor and that's what happened with these.

Roasted Garlic Lemon Broccoli

Yummmmmmm!!!! This broccoli is awesome and really couldn't get any easier. I used 2 cloves of garlic though cause we are garlic lovers. If you toss the broccoli in a ziploc bag and then line the pan w/ foil there is hardly any clean up!

Ham 'N' Cheese Quiche

Very good basic recipe. I add sauteed onion and 1/2 t. of ground mustard, I usually just use milk and it works out fine.

North Carolina-Style Pulled Pork

I am reviewing this as of now for the sauce only. It's delicious! I used a little less vinegar (b/c I ran out) and less red pepper for the kids. All in all very good and next time, I will try prepping the pork with all the seasonings (although I will still cook it in the slow cooker). Edited: Did the spice rub on the pork and let sit overnight...made sauce as written and it's really spicy! Next time will cut the crushed red pepper in half at least and maybe use just a touch less vinegar, 1 and 3/4 cup perhaps. Edited again: Will use about 1/2 the white pepper next time too.

Bacon Roasted Chicken

Very good moist chicken. I put the bacon on like lattice across the whole chicken (like in one of the pictures posted) and there was no need for the toothpicks. I added the bacon to smashed cauliflower for a side dish. It takes a lot longer than 15 minutes to brown the skin when you take the bacon off though.

Chicken Marsala

Made this for my mom's birthday dinner. Followed some other reviews and used all marsala, no sherry. Added a little cream at the end to thicken up the sauce. Needed extra seasonings, especially salt.

Fried Green Beans

Left out the lemon zest and thought they were plenty "lemony". Also used fresh garlic in place of garlic salt. Cut down on the oil and butter a bit too. Will make again.

Seven Spiced Shark Steaks

Simple and delicious! I only used 1 T. of each spice b/c I wanted it more like a marinade rather than a rub. I'm glad I did that. I also used garlic powder rather than garlic salt and still thought it was a little on the salty side (used low sodium soy sauce as well). Made homemade tartar sauce to go with it.

Chicken Florentine Casserole

This was good...quite rich though. I would probably skip the half and half or use milk instead next time. I sauteed the spinach and mushrooms w/ garlic. I didn't bother to cook the chicken first as I don't see it necessary. I cubed the chicken and then just cooked the casserole for 50 minutes. It came out great.

Yeesh, I don't quite know how this got good reviews. I followed the recipe to a T and ended up with spicy vinegary chicken. I even let the sauce cook down for 35 minutes. I'm glad some people got good results from this, but it wasn't for us.

Balsamic Pea Salad

Yum, yum...it's the middle of winter and I'm craving "summer" foods and this is it. Delicious...I didn't have any green onions so I substituted red onion. I also used salad dressing in place of mayo because I like the tang. Will definitely be making this again and again. (Used a little less than 1/2 cup of salad dressing) Edit 4/30/12: I have used different flavored balsamic vinegars in this and it's even better. This time I used fig balsamic for a little sweet kick. I've also been cutting back drastically on the amount of mayo/salad dressing. I now only used about 2 tablespoons.

Easy Garlic Broiled Chicken

We really enjoyed this, however I baked the chicken rather than broil it. I've never broiled chicken and was worried as some of the reviews said it got smokey. All in all a very good and easy recipe. I made smashed cauliflower to go w/ it and took some of the drippings and mixed them in. YUM!

Ham with Honey and Brown Sugar Glaze

I changed the recipe to what I had on hand but I'm sure as written it's fantastic. I used orange juice in place of pineapple juice and left out the cloves simply because I don't like them. The sauce was delicious and is good over whatever veggie you are serving too!
