Grilled Orange Chicken

This didn't wow me, although I didn't have enough marmalade and had to use orange peel and oj to make up for it and I think that just threw off the whole marinade. I will try it again when I have enough marmalade.

Crustless Bacon and Cheese Quiche

This is good, just a little on the bland side for us. I think next time I will use regular onion and fry it up in the bacon grease w/ the mushrooms. I will also replace the mozzarella with swiss. Will add a little salt and pepper and dry mustard next time as well. All in all a good low carb dish.

Breaded Toasted Ravioli

These were a nice change when I wasn't in the mood for just regular ravioli. I added garlic and onion powder and salt to the breadcrumbs. They were a little chewy but I think that was my quality of ravioli (cheap!).

Shrimp Melt

This was so insanely salty it was practically inedible and I only used half the Old Bay. Wow, maybe with like a teaspoon of Old Bay it would be good.

Easy Caramelized Onion Pork Chops

Very good with some changes. :) I used 1 1/2 onions, also added some mushrooms that needed to be used up. I seared the pork chops, removed them, cooked down the onions and then added the pork chops back w/ water and a beef buillion cube. There was a lot of liquid and it didn't seem to be evaporating and my pork chops were done. So I removed the pork chops and thickened up the sauce. It was delicious! It was like an onion gravy.

Juiciest Hamburgers Ever

I rarely make burgers b/c they always turn out like crud. Not these though! They were perfect. Very juicy and flavorful. I used half and half instead of evaporated milk b/c that's what I had.

'Chinese Buffet' Green Beans

Ginger Glazed Mahi Mahi

Made this for dinner tonight and it's a definite winner! I just realized when re-reading the recipe that I forgot the garlic! It was still awesome, but definitely would have been better with the garlic. Definitely won't forget that next time! I baked this in the oven just b/c it was easier for me. My filets were thick and took about 18 minutes at 425. I only made 2 but left the sauce amount the same.

Playgroup Granola Bars

Good, I subbed craisins for raisins and did 1/4 c. veg oil and 1/4 c. applesauce and used ground flax in place of wheat germ. All in all very good and all the kids agreed! Edit: I have made these at least 5 times now. I've added chocolate chips, but honestly prefer them without. I also use wheat flour in place of white. And with reading other reviews, I found that if you don't press them to the edges of the pan, instead leave about a 1/2 inch border all around, they turn out much better.

Best Easy Chicken Croquettes

Everything just tasted like poultry seasoning to me. It needs to be reduced significantly in my opinion and taken out of the gravy all together. The croquettes needed salt and something else however I'm not sure what that else is. They just weren't what I expected and weren't like I remember them growing up.

Black Bean and Corn Quesadillas

These were good, I liked the sweetness from the brown sugar. They could definitely use some tweaking though. I think adding chicken and other spices would be good. ETA: Made these again w/ grilled chicken and liked them so much better! It added the extra something I was looking for.

Garlic-Herb Roast Pork

I made this with a pork tenderloin and it was delicious. I actually marinated the pork in this mixture (used dried herbs) for about 4 hours. This baking method produced the juiciest pork ever! I had to cook it at 300 degrees for about 35 minutes to get it up to 150.

Surprise Muffins

I had doubts about these but they turned out awesome! I used ground flax in place of the wheat germ and a little bit of applesauce in place of some of the butter. I used orange marmalade for the filling but I think some sort of berry would be even better, like strawberry or raspberry. This only made 10 muffins for me.

Beer Batter Fish Made Great

An absolutely fantastic beer batter recipe! I had so much batter leftover that I made beer battered onion rings, broccoli and mushrooms. Fantastic! Used a light beer because that's all we had on hand, next time would prefer to try with a dark beer.

Flax Seed Zucchini Bread

Wow! Let me tell you, my DH saw me making this and was very skeptical. He was really thrown by the tofu and flax. :) I told him he wouldn't even notice it, but was a little nervous myself. It turned out awesome! I left out the walnuts b/c I don't like them. And I didn't have walnut oil so I used half canola oil and half applesauce.

These are good, nothing to write home about though. I let the carrots cook in the glaze for quite awhile yet, I still found it hard to find the honey or ginger flavor in these.

That Good Salad

The first couple bites of this salad didn't wow me. But as I kept eating it and getting all the ingredients mixed together, it got better and better and I ended up loving it! Hubby loved it right away! I love the lightness and simplicity of the dressing.

French Onion Soup Gratinee

Excellent french onion soup! DH and I both loved it. However I may change up a few things next time to see if I like it even better. Use half beef broth, half chicken broth and only 1/4 c. of wine. I think I was looking for a little more beef flavor and a little less wine flavor. It's still excellent as is though.
