Chicken Fiesta Salad

We loved this salad. I made my own taco seasoning and used half for the chicken and mixed the other half w/ ranch dressing. I used mexi corn, jalapenos, black beans and onion and mixed it with taco sauce (didn't bother to heat it). I added avocado to the salad as well. It looked like a salad that would be served in a restaurant.

Vinegar Grilled Chicken

Makes good juicy chicken, but the flavor is nothing special. I marinated for a couple hours and basted several times while on the grill. Next time I will marinate over night.

Angel Chicken Pasta

Make this in the slow cooker! It's so easy and good. No need to melt everything together first, just throw all the ingredients in the crock pot and whisk till smooth, throw in chicken and cook on low for 4-5 hours. I have even cooked the spaghetti ahead of time and mixed it in at the end and let it warm back up. My kids love this.

Garlic Teriyaki Edamame

These were great! I ate all of them on my plate before even touching the main dish. There are some in the pan still after dinner and I keep grabbing them every time I walk by. FYI...someone posted about the pod being tough, you aren't supposed to eat the pod, you pop them out of the shell by pulling it through your teeth.

Sour Cream Peach Kuchen

This didn't turn out well for me at all. The crust was really dry and didn't hold together. There weren't enough peaches which obviously was my fault but all together it just didn't work for me. Sorry.

This isn't even out of the oven yet and I'm giving it 5 stars. You just can't go wrong with this recipe. It smells awesome and it looks awesome! My grandmother made this recipe all the time when I was little. ETA: Following morning...yup, it's delicious.

Grilled Sweet Potatoes

We ate these, but didn't really care for them. Sesame oil and soy sauce are 2 of my favorite ingredients however they just didn't pair well w/ the sweet potatoes in my opinion. I'll stick to my regular sweet potato recipe.

Kentucky Grilled Chicken

This was ok. 6/2/2012 - Had to come change my rating. The first time I made it, I marinated but didn't baste while the chicken was cooking. This time I marinated and basted it while cooking and it was delicious!! Def will make again.

Maryland Crab Cakes I

Perfect crab cakes! I used panko breadcrumbs and a little less Old Bay. They are good fried but they are just as good broiled for 10 minutes (brushed the tops w/ a little melted butter first).

Grilled Orange Chicken

This didn't wow me, although I didn't have enough marmalade and had to use orange peel and oj to make up for it and I think that just threw off the whole marinade. I will try it again when I have enough marmalade.

Crustless Bacon and Cheese Quiche

This is good, just a little on the bland side for us. I think next time I will use regular onion and fry it up in the bacon grease w/ the mushrooms. I will also replace the mozzarella with swiss. Will add a little salt and pepper and dry mustard next time as well. All in all a good low carb dish.

Breaded Toasted Ravioli

These were a nice change when I wasn't in the mood for just regular ravioli. I added garlic and onion powder and salt to the breadcrumbs. They were a little chewy but I think that was my quality of ravioli (cheap!).

This was so insanely salty it was practically inedible and I only used half the Old Bay. Wow, maybe with like a teaspoon of Old Bay it would be good.
