Chicken Florentine Casserole

This was good...quite rich though. I would probably skip the half and half or use milk instead next time. I sauteed the spinach and mushrooms w/ garlic. I didn't bother to cook the chicken first as I don't see it necessary. I cubed the chicken and then just cooked the casserole for 50 minutes. It came out great.

Michael's Chicken

Yeesh, I don't quite know how this got good reviews. I followed the recipe to a T and ended up with spicy vinegary chicken. I even let the sauce cook down for 35 minutes. I'm glad some people got good results from this, but it wasn't for us.

Balsamic Pea Salad

Yum, yum...it's the middle of winter and I'm craving "summer" foods and this is it. Delicious...I didn't have any green onions so I substituted red onion. I also used salad dressing in place of mayo because I like the tang. Will definitely be making this again and again. (Used a little less than 1/2 cup of salad dressing) Edit 4/30/12: I have used different flavored balsamic vinegars in this and it's even better. This time I used fig balsamic for a little sweet kick. I've also been cutting back drastically on the amount of mayo/salad dressing. I now only used about 2 tablespoons.

Easy Garlic Broiled Chicken

We really enjoyed this, however I baked the chicken rather than broil it. I've never broiled chicken and was worried as some of the reviews said it got smokey. All in all a very good and easy recipe. I made smashed cauliflower to go w/ it and took some of the drippings and mixed them in. YUM!

Ham with Honey and Brown Sugar Glaze

I changed the recipe to what I had on hand but I'm sure as written it's fantastic. I used orange juice in place of pineapple juice and left out the cloves simply because I don't like them. The sauce was delicious and is good over whatever veggie you are serving too!

Caramelized Baked Chicken

Very good, however to get the sauce thick and caramelized I had to boil it down and add cornstarch (did this after I pulled the chicken out of the oven). Then poured the sauce back over the chicken and broiled for a couple minutes and it got nice and gooey. It reminded me and my husband of a dish from a chinese restaurant.

Italian Peas

I love dressing up cooked veggies and this is definitely a keeper! I got nervous that the onion and garlic would overtake the dish too much so I cut back on the onion. I also used about 1/3 cup of chicken stock cause I wanted the flavor of it and didn't think 1 T. would do the job. edited: like someone elses tip to thaw the peas in cold water first.

Newport Clam Chowder

I'm giving this 5 stars b/c I think as written it will be 5 stars. We had to substitute chicken broth for some of the clam juice and also didn't have enough clams. We added some carrots and celery too. Next time I will follow the recipe to a T and I'm sure it will be even better.

Slow Cooker Beef Stew I

I like the idea of not having to brown the meat first. I always hate crock pot recipes that seem to make just as many dishes as if you are cooking a meal on the stove. Tasty and easy.

Neat Sloppy Joes

Gotta love a basic, simple sloppy joe recipe. I added some zucchini b/c I had one sitting in the fridge (good way to sneak veggies into kids food). I also added a couple teaspoons of yellow mustard and used balsamic vinegar in place of white.

Slow Cooker Chicken Taco Soup

So easy and so good! I used 3 chicken leg quarters and the meat literally fell off the bone, it was barely any work to shred it! We served w/ sour cream, crushed tortilla chips and cheese. Great dinner for a cold fall evening.

Scrumptious Salisbury Steak in Mushroom Gravy

I wanted a recipe that didn't use cream of mushroom soup and was still easy. This is it! Yum, yum, yum! A great comfort food. The only thing I changed was to use fresh mushrooms instead of canned which I would definitely recommend! This would also be good with some sliced onion added w/ the mushroom sauce as well.

My Best Clam Chowder

I'm giving this 4 stars for now because I want to change a few things next time and then it might be perfect. I will definitely use all clam juice next time rather than water. And will add one extra can of clams (I used chopped, not minced). I cooked up 3 slices of bacon and sauteed the onion, carrot and celery in the bacon fat for just a few minutes. I also used cider vinegar b/c I didn't have any red wine vinegar...I was super nervous about adding the vinegar b/c it seemed weird, but it worked!

Baked Pesto Chicken

Easy weeknight dinner and quite tasty! I did take other reviewers advice and marinate the chicken for an hour in the pesto. Then baked and added a 4 cheese blend at the end rather than mozzarella. I only put tomatoes on my chicken but didn't think they added much to the dish.

Honey Lime Chicken Wings

Hubby and I loved these wings! I made these as one of three different kinds tonight and wish I would have made them all like this! All the flavors were subtle but worked so well together and I loved that they weren't "swimming" in sauce. Oh and I added just a little bit of cayenne, paprika, salt and garlic to the flour.

Chili Rick's

Made this for my daughters 2nd birthday party (mostly all adults) and it was a huge hit. I got a lot of compliments! I toned down the spice as a lot of my family doesn't care for super spicy things. Also cut the bbq sauce in half per other reviews and I'm so glad! I think it would have been way too much like bbq and not chili had I added the full amount. Served it with fritos, cheese and sour cream.

Frog Cupcakes

Very cute cupcakes! Made these for my daughter's 2nd birthday and yes, they are time consuming and tedious but well worth it. I cut the marshmallows in half and then cut a little piece off the bottom to make them sit flat. Used a mini pair of tongs for dipping the mallows in water and then coating w/ sugar. That was the hardest part I think. Putting the chocolate chip eyes and the mouths on was easy.

Grilled Pork Chops with Balsamic Caramelized Pears

The flavor of this was great. I think I need to work on the look of it though. The pear and onion sauce wasn't very saucy so it didn't look all that great. I love that you can make everything ahead of time so yes, while it's a little time consuming, it's not hard per say. I managed to make this on a week night with a toddler running around! I love brining the pork chops and will probably do this a lot from now on.

Little Broccoli Bites

"As is" these are a little plain. I would definitely dip them in some sort of sauce, like a spicy honey mustard. They could also use more seasoning. I like the poultry seasoning flavor but think some garlic might kick it up a little. I think next time too, I will turn them half way through cooking so they get brown on both sides.
