Chicken Taco Casserole

This was really tasty and even the kids enjoyed it (rare). To make it healthier, I made my own cream of chicken soup and only used the equivalent to one can. I also made my own taco seasoning and used whole grain tortilla chips. For the chicken, I just used a store bought rotisserie chicken that I had bought and shredded a couple days before.

Best Chocolate Chip Cookies

My 4 year old and I just made these. (Scaled down the recipe by 1/3) We didn't wait long to try one and my first reaction was oh my god! These are the best things we've ever made! Mind you I don't bake nor do I really like sweets! But these cookies are in my book perfection. Crispy on the outside and chewy in the middle and fairly flat. I despise big poofy cakey cookies. We will make these whenever we have an afternoon cookie craving!!! Followed the recipe exactly except left out the nuts. Edited note: do NOT bake on convection setting, they turn out poofy instead of flat.

Sheryl's Corn and Crab Chowder

Halved this recipe and it still made plenty! Changes I made... Didn't have any shrimp so doubled up the crab and subbed old bay for creole seasoning. Didn't add green pepper cause I don't like it. Used all half and half bc I didn't have heavy cream. Next time I'll use way less white pepper, maybe even cut it out all together. I don't really care for it and the kids thought it was way too peppery! Overall very very tasty!!

The Best Potato Salad

Delicious traditional potato salad with a slight twist. It's creamy and eggy and mustardy. Just delish! The ranch adds a little extra something without being overwhelming. Very very good!! I do not add the optional ingredients.

Chicken Cordon Bleu Bites

Pretty good. Needed salt and pepper. I also added sautéed onion and garlic. I don't bother to fry them first, just bake in oven. Served with homemade honey mustard.

Perfect! made this many times as is. This time to cut down on calories, I subbed half the mayo with plain greek yogurt and it still tasted excellent!! Great healthier version!

Grandmother's Pound Cake II

Simple and tasty! Added a little vanilla extract, scaled recipe down to make one cake. Baking in square pan in convection oven only took 35-40 minutes.

Chef John's BLT Pasta

This was just ok. Arugula is not my favorite and I should have known the kids wouldn't like it but wanted to follow the recipe exactly the first time. The arugula overwhelmed the dish in my opinion and it didn't resemble a BLT at all because of that. I think perhaps with spinach or kale this would be better.

California Grilled Veggie Sandwich

Phenomenal sandwich! I added a portabello mushroom and used asiago cheese instead of feta. Also used a garlic rosemary loaf of bread. Can add balsamic vinegar as well, was good with and without.

Pumpkin Wheat Honey Muffins

As written, didn't think these were so great. The did 1 c. White flour and 1/2c. Whole wheat flour and that made all the difference! Also added a 2T. Applesauce and 1/4 t. Cinnamon.

These wings are delicious! I usually grill them and then pour the sauce over. If the kids aren't eating them I add a couple squirts of Siracha to the sauce for some kick.

Shrimp and Crab Bisque

I've made this as written and it's good, with some changes it's great. I saute the onion (more than called for) and some celery in the butter. I then add the white wine and let it reduce a little. I then add flour/half and half or just heavy cream and let it thicken up and then I hit it with the immersion blender so there are no onion or celery chunks. I saute the shrimp in garlic and evoo until they are about half done and then I coarsely chop them and add them to the soup with the crab to let them cook the rest of the way. I also reduce the white pepper to about 1/8 of a teaspoon and add old bay to taste. Sometimes I add a pinch of cayenne. Delish!

Applesauce Pork Chops

These were super easy and tasty for a quick weeknight dinner. The pork chops were overcooked at 30 minutes though, next time i will only put them in the oven for about 20 minutes. I used a stainless steel frying pan and went straight from stovetop to oven making for easy clean up.

BBQ Chicken Pizza from Pillsbury® Artisan Pizza Crust

Yum! A nice change from regular old pizza. I used a rotisserie chicken from the grocery store so the prep was super easy. The red onion makes it though and I will probably add a little more next time! I may even consider carmelizing the onions if I have time, I think that would be fantastic.
