Peach Dump Cake

The butter sat like globs on top of the cake mix. The cake mix was still powdery after baking for nearly an hour.

Oven Roasted Potatoes

Will absolutely make these again. Doubled the recipe. Scrubbed and quartered the spuds. Tossed them with Parmesan cheese after roasting.

Great Pumpkin Dessert

The only reason I gave this a four instead of five is due to the adjustments necessary. I cut into the cake mix, with a pastry blender, unmelted butter and a beaten egg. Used one tsp. cinnamon, 1/2 tsp. each of ginger, nutmeg and cloves. It was good.

Mexican Casserole

What a great idea! I too used what I had on hand. Had made a pot of pintos that included hot salsa, onions, garlic, corn, tomatoes, chorizo and spices. Drained two cups of the beans and used it as the filling. No need to saute. Used both Jack and Cheddar. A super time saver.

Pumpkin Crumb Cake

I took "Sweetcakes" advice and doubled the filling. I too add spices to just about everything. Cinnamon, Nutmeg and Cloves always with Pumpkin. Because the density was doubled, it took more than twice the time to bake -- but well worth the wait.
