About this Cook
I like to eat, therefore I learned to cook.
My favorite things to cook
Soups and stews
My favorite family cooking traditions
corned beef and cabbage, chicken and dumplings, biscuits and gravy, chicken kiev.
My cooking triumphs
Cauliflower Soup with Bleu Cheese
My cooking tragedies
I wish I enjoyed Baking more, as I love to eat baked goods. The process just doesn't excite me as much as a good soup base (I love the smell of onions sauteing with butter!).

Spicy Rapid Roast Chicken
I love this chicken! I usually increase all the spices as other reviewers have said, and usually add lots of vegetables to the pan as well as stuff the cavity. Some of my favorite combos are carrots, celery, and fennel bulb. Also onions and lemon quarters in the cavity. Never had trouble with a smoking bird, and I've made it many times. I usually make rice and use some of the drippings to flavor it. Yum!

Cream of Cauliflower Soup I
This was so delicious. Try bleu cheese instead of swiss cheese for a unique and amazing taste. You won't need to use very much to notice it. Try melting in about 1/4 cup of crumbled bleu cheese and then topping the soup with additional crumbles. Serve with oyster soup crackers - Sooo good!

Sixteenth Century Orange Chicken
This turned out great! I made rice to go with it and added some of the currants and cloves while it steamed in chicken broth. With some toasted almonds on top it made a wonderful accompaniment to the chicken. Next time I want to try this in the slow cooker and really let the flavors soak in.
