Black Bean Hummus

Reviewed: Jan. 1, 2013
As good as any store bought and healthier (no added oil). Incredibly easy. I've made it 3 times in 2 weeks for various people and they've all loved it. Don't have cayenne pepper so I used 1/4 tsp red pepper + 1/4 tsp chili powder.

Marinated Tuna Steak

Reviewed: Jun. 20, 2011
I love tuna, but I've never had anything I made at home that I thought was GREAT. This was! Even my daughter who hates fish ate some. The only thing I did different from the recipe was 1) I substituted about 2 Tbsp teriyaki sauce for soy sauce, only because I was all out of soy sauce (so don't count that) and 2) I marinated for about 1.5 hours based on other reviews. Grilled for just 2:10 sec per side (I know, that's awfully precise, but you have to be with tuna or it gets overcooked and dry) and it was perfect.

D's Famous Salsa

Reviewed: Jun. 4, 2011
Really easy and tastes great. I make it as described, but I do drain the tomatoes because I personally like chunky and not watery salsa.

Sweet Cornbread Cake

Reviewed: Jan. 3, 2011
I've been looking for a sweet cornbread like one at a local store and have tried a few recipes. This one is the best I've found so far (and is very good). Not sure if made any difference, but I used non-fat milk. I'm sure there were still plenty of calories and fat from other parts though.

Apple Pie by Grandma Ople

Reviewed: Dec. 14, 2009
I hate when people do this, but here I go. I've never made the recipe exactly as written. I read some of the suggestions in other reviews and decided to try those as well as just wing it. Using my recipe, my family LOVES this pie. Easily our favorite ever. Here's the changes we use: add 1 tsp of cinnamon, 1 tsp of nutmeg, and 1 tsp of vanilla to the sauce mixture. I add the vanilla only when its simmering. Not sure if it matters, just thought it made some kind of sense. I also don't use a lattice topping because my family likes a crumble type topping. I made it with 1/4 c butter, 1/2 flour, 1/2 cup brown sugar, 1 tsp cinnamon, and 1/3 c oats. The recipe says the butter and flour should be a paste, but mine is never pasty. The last time I added 1 more Tbsp of flour but it didn't get much pastier so I just left it along. I use empire apples and cook it a little shorter (15 min @425 and 25-30 @ 350). If I go longer, the applies turn to mush, but of course that's my oven, not yours. Just don't over cook it.

Slow Cooker Stuffing

Very good. I used some day old "italian sweet bread" for the bread cubes and it came out really good.

Apple Pumpkin Muffins

Reviewed: Nov. 9, 2009
Maybe my favorite muffin ever. I made mini muffins and medium size ones and had to adjust the time, but that was all. I bake the mini muffins for 18 min. and medium size for 25 min.

Strawberry Dream Cake I

Reviewed: Jun. 29, 2009
I haven't made any other strawberry cakes, but this one is great. I used low fat cream cheese and it seemed fine. I tried non-fat cream cheese for the frosting, but I wouldn't recommend that. I also used fresh strawberries instead of frozen.

Best Guacamole

Reviewed: May 19, 2009
Why give something 5 stars when so many people make changes? I have to give it 4 stars as written because I think 2 Tbsp of olive oil was too much. I made a 2nd time with only 1 Tbsp and it was better, but with all the oil in avocados to start with I'm not sure you need it at all. I also added tomatoes, but I guess that's a personal taste. I also think I'll try lime juice next time like many people suggested.

Crab Stuffed Flounder

This was great! I made more of the crab stuffing (double) for 6 total filets because we all like crab, but the taste was amazing. This was one of the best fish dishes I've ever had.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Feb. 19, 2009
I made them for dinner one night and when my wife and I exercised the next day we had noticeably more energy. So maybe they're a good energy food also. I used fresh blueberries and a lot more than 1/2 cup, maybe 1-1/2. I think I'd also recommend letting the batter sit for 15-30 min to give the oats time to soak in the liquid.
