Hot Fudge Sauce II

I have been less that satisfied with other hot fudge recipes I've tried, but this was delicious. I'd just made salted caramel ice cream (cuisinart website recipe...SO good) and wanted to make some hot fudge to go on top. I did make a couple of changes. I used 1/3 cup white and 1/3 cup and melted it down with 1 T butter hoping this would make my sauce smooth and not grainy like they usually turn out. It worked! I only had a litte cocoa powder...1 T and some semisweet chocolate chips and half and half, but it still turned out great. It thickened up well in the fridge overnight. Addictive!

My husband said that we don't need to wait until Christmas to have these again! :) I added a teaspoon of cardamom for a Scandinavian flavor. Delicious! I served these with the choice of blueberry sauce, powdered sugar and/or cream cheese frosting. (I warmed the frosting so it was more like a glaze. I bought the Lodge cast iron pan from Amazon. I did not put an entire T of butter in each well, probably a teaspoon or less each time and they turned out very well. I turned them with a chopstick. I think I'll go have another! So yummy. If you don't have an Aebleskiver pan, the batter would be great as a waffle!

Hamburger Soup

A surprise 2 night visit from the in-laws prompted me to look up a recipe using ground beef. These folks think tacos are "fancy," so I try to keep it simple. This recipe has enough flavors to satisfy me and is basic enough not to scare the in-laws. It was quick to make starting at 8:45 p.m. on a Sunday so they'd have something for lunch tomorrow. I just had a little dish and it's delicious! I used beef broth instead of chicken and butter. Yummy!

Beef and Lentil Soup

Perfect for a cold January night! I made some of my own beef stock w/ my leftover Christmas Prime Rib roast. I didn't have lots of meat, but the flavors were great. A can of crushed tomatoes worked well since I was out of diced. I also used fresh cilantro and a splash of red wine in my bowl just because I had some. A good Balsamic vinegar would also be tasty. The parm on top was excellent. Leftovers for tomorrow! Yeah!

Microwave Caramel Popcorn

This is so easy and yummy! I used 12 cups of popcorn and added a heaping cup of cashews and it was still plenty of caramel. Love it!
