Honey Curried Roasted Chicken and Vegetables

This was purely awesome. Everyone from my picky 2 year old to Grandpa who "hates" curry went back for seconds! I made it in the slow cooker on High for 4 hours and it came out beautifully even with frozen thighs. I didn't realize I was down to my last tablespoon of honey beforehand, so I used honey mustard instead of dijon, and everything was still the perfect balance of sweet and savory.

Apple-Cheddar Tossed Salad

Three out of the four people at dinner liked the dressing (including my toddler), everyone liked the salad. It's a nice, easy way to dress up a salad. I used shredded chedder since that was what I had on hand, and omitted the onion from the dressing.

Tofu Quiche with Broccoli

This was decent. My toddler liked it, but he likes broccoli a lot. I laughed quietly to myself as my FIL who "hates" tofu went back for seconds. The only changes I made were using hemp milk instead of soy, and throwing more cheese on top (Should have used cheddar, the parm wasn't that interesting a contrast for me.)

Spring Risotto

5 stars for the taste, but 3 for the time that it takes. Ended up taking me almost 2 hours, and while the end result was wonderful, I can't justify babysitting a pan for 2 hours for fancy rice!

Crunchy Dilled Slaw

Didn't do much for me, but my FIL, who is more accustomed to European-style slaws, liked this. I Think I will reduce the liquid amounts if I make this again, however, because I felt there was A LOT of excess liquid, instead of just coating the veggies.

Meatballs Mexicana and Rice

I made this according to directions except that I used pre-made frozen meatballs, and I threw everything but the corn & rice in the slow cooker and put it on low all day. Threw in corn half hour before serving, everyone including the 3 year old went back for seconds!
