Beef Enchiladas II

This dish was just ok. Not working with enchilada sauce before, I didn't realize it can be so bland. I think next time I will saute some peppers with the hamburger and onion along with adding some spices such as cumin, cayenne pepper, and maybe even some garlic salt or powder. Might give it another shot, but definately needs some taste.

Manicotti Alla Romana

This recipe was very good except for the fact of the white sauce making the dish way toooooooo SALTY! I agree with a previous reviewer that the chicken bouillon needs to be reduced or just removed completely. Also, I used 3/4 pound of italian sausage mixed with 1/4 pound of ground sirloin along with 1 1/2 pounds of ricotta. Doesn't really take as long as you think it would to prepare, especially if you condense down the instructions. Will definately make this one again, but will omit the chicken bouillon.

Strawberry Spinach Salad I

Absolutely a wonderful salad! If I could rate this higher than 5 stars, I would! I did slice the strawberries the day before and wrapped in paper towel, then sealed in airtight freezer bag. Hats off to Andrea!

Fresh Salsa I

This was okay and makes way too much sauce not salsa. If you're into hot & spicy, then the flavor of this recipe is for you. If you like your salsa chunky, then this is not the recipe for you. Although, this was very simple to make, it was not the hit of my party on Saturday. Possbily could be the fact that I had 5 other appetizers and people went for the other dishes. Going to have to play with this one before my next party in August. Also, I agree with another reviewer and roasting the garlic might be a good idea.

Sauteed Portobellos and Spinach

Very different dish, never would have thought to mix spinach w/mushrooms. I did, however, modified the recipe. I used 6 cloves of garlic and 1/8 cup of Parmesan cheese. Also, I suggest omitting the salt as you really don't need it unless you prefer a strong salty taste. Thanks Leslie for a wonderful side dish!

Garlic Sauteed Artichokes

Very good and different way to make artichokes! I did, however, use 6 large cloves of garlic since we are garlic lovers. I also added 3 Tablespoons of Chicken Broth in the last 5 minutes of steaming because I have a very powerful stovetop and needed more liquid. Thanks for the recipe John!

Grilled Shrimp Scampi

This is a great recipe for shrimp! Although I did kick up the amount of garlic to 4 Tablespoons, because the hubby is a garlic nut! And I added 1 1/2 tsp of cayenne pepper to bring the temp up. Great, great, great recipe, thanks for posting!

Herbed and Spiced Roasted Beef Tenderloin

Wow, what a great rub!! Every year we are invited to visit some friends up north for a snowmobiling/ice fishing weekend. This year I decided to bring dinner for Saturday night. We used this rub on an 8 lb. tenderloin (had to make 4 times the recipe) and it was a huge HIT!!! The aroma from the rub/roast filled the house with a wonderful smell and the taste matched the smell. Even my 9 year old loved it. Thanks Eileen for the great recipe!

Brown Sugar Meatloaf

This was a very good meatloaf! I haven't made one in years and even my picky 9 year old at it. I did omit the onions, because of the 9 year old, but did add a tablespoon of onion powder for the flavor. Thanks for the recipe, will be making this one again!

Holiday Red Punch

Very Kid Friendly! All 30 of them at my son's school party enjoyed this punch. The only thing the asked about was the "little floaties" and had a hard time convincing a few of the kids that it was the pulp from the lemonade.

White Chocolate Covered Pretzels

Very Kid Friendly! Made these for my son's holiday party at school and the kid's just ate them up! Just a note on a different way to prepare. Melt the chocolate in the microwave and use a skewer to swish the pretzels in the chocolate. Worked wonderful!

Crab Dip

Great dip! I made it for my picky brother-in-law for Xmas dinner. He loves crab, but won't eat my crab stuffed mushrooms, so this was a great alternative. It was a big hit and none of it went home with me.

Asparagus Cashew Rice Pilaf

I made this as a side dish for Xmas dinner and it was a big hit! Only alterations I did with the recipe was increase the cashews to 1 cup and toasted them in the oven prior to preparing the dish. Nice presentation dish for special occasions. It went great with the Lobster stuffed Beef Tenderloin! Thanks for the recipe!

The Ultimate Chili

Very good Chili! Unfortunately, it was missing the "kick" my husband I love. So, I added the following ingredients and if you like it spicy try adding these: 2T Garlic Powder, 1T Cayenne Pepper, 1T Salt, 3T Brown Sugar, 2T Honey, and 1T of extra Chili Powder. Oh yeah, a suggestion to thicken up the chili is to use 2T of Corn Starch with 4T Water. Hats off to Wendy for creating this dish.

Artichoke and Roasted Red Pepper Dip

Excellent Recipe!!!! I served it with multi-grained crackers. I swear the dip was gone within 15 minutes of me setting it out with my other appetizers. Kids really didn't care for it which was fine, more for the adults. Served it for 30 adults and would recommend doubling recipe for this size of crowd.

Annie's Fruit Salsa and Cinnamon Chips

Excellent Recipe! I just served it this past Saturday for my son's 9th Birthday party and there was very little left. I doubled the recipe (because I was serving 50 people) and I think there was only a cup leftover. Also, when doubling you really only need 3 Tablespoons of Preserves especially if you make it a day ahead of time. Makes a ton of juice if you leave overnight before serving (The kids used the juice on their ice cream after dinner). And for the Cinnamon Chips.........They were PERFECT!!!! Made these about 2 days in advance and sealed in an airtight container.(They extremely crispy). Thanks to the individuals who posted a review with the pizza cutter idea.....IT WORKED GREAT!!!
